When I lived in Germany, one of my favorite restaurants there (a Chinese restaurant) served a Beef With Onions dish. This recipe is the closest thing I've had to it. The first time I made this, I found that thinly slicing 4 onions produces a BIG pile of onions! But they cook down a lot.

1 lb sirloin steak, julienned
1/2 teaspoon salt
1 egg white
1 tablespoon cornstarch
2 -4 cups oil, for deep-frying
3 -4 onions, sliced thinly
1 tablespoon cooking sherry
1 tablespoon sugar
2 tablespoons soy sauce
cooked rice

Steps:

  • Combine beef, salt, egg white and cornstarch; mix well with hand.
  • Heat oil; deep-fry beef until it is seared. Drain.
  • Reheat 2 tablespoons of oil. Add onion and stir-fry until soft and well browned, about 20 minutes.
  • Add beef, sherry, sugar and soy sauce. Stir-fry 1 minute, until beef is glazed and brown.
  • Serve over rice.

There is a Lanzhou Ramen near home, which is run by Xinjiang people, and a family of several people is busy with a noodle restaurant. His mixed beef is very delicious, but the portion is so small, and most of it is filled with onions.
I received a trial from the Food Festival Mall today, a casserole, hurry up to stew a beef and eat it. I also learned the practice of a ramen restaurant. It is a perfect copy, and there is more beef than onions.

750 grams Beef Brisket
1 tree shallot
10gram ginger
1/4 onion
Half root Cucumber
10 capsules pepper
Right amount Cinnamon
4 slices Bay leaf
3 grams Licorice
Right amount salt
1 scoop Soy sauce
1 scoop Oyster sauce
10gram Sugar
A few drops sesame oil

Steps:

  • Soak the sirloin for more than 2 hours to remove blood and wash
  • Put the seasonings in the seasoning box. These seasonings were given by the stall owner when I bought the beef. I looked at it and found that there are more cinnamon and bay leaves.
  • Put beef, green onion knot, sliced ginger, seasoning box into a casserole, add water that can soak the beef
  • Cover the casserole and bring to a boil
  • Skim the foam, turn to medium and low heat and continue to simmer for 1 hour
  • The beef is stewed and the soup is clear
  • Take out the stewed beef and let it dry for a while, it’s best to put it in the refrigerator for a while
  • Cut the chilled beef into thin slices, it needs to be big enough to be strong enough
  • Cut the beef slices, shredded onion, and shredded cucumber into the salad bowl
  • Add all seasonings
  • Just mix well
  • Look, there is a lot of beef
