Infused oils are best made in small amounts as they go off quicker. Keep this simple homemade version in a cool, dark place and use within a month or so

olive oil (not extra-virgin) 350ml
small dried red chillies 6-8

Steps:

  • Sterilise 1 or 2 small glass bottles by washing in very hot soapy water, rinsing well then putting in a 180C/fan 160C/gas 4 oven until completely dry.
  • Put the oil and chillies in a small pan and gently heat until you see tiny bubbles. Turn off the heat and leave to cool completely. Strain the oil into bottles and add in a few of the chillies, if you like.

Chilli lovers rejoice! Our chilli oil recipe is quick and easy to make. Drizzle over pizza, pour into pasta sauces or add a dash to your favourite recipe.

Number Of Ingredients 3

500ml extra-virgin olive oil
5 tbsp mixed dried chilli flakes (visit https://www.coolchile.co.uk/coolchile.co.uk for a good selection)
2-3 long dried chillies

Steps:

  • Heat the olive oil and chilli flakes in a large pan over a low heat for 5 minutes, making sure the oil doesn’t start to smoke. Remove from the heat and leave to cool for 5 minutes, then pour into a sterilised glass bottle or bottles. Insert the long dried chillies into the neck of the bottle, then seal.
