SKYLIKE CHILI - SKYLINE CHILI COPYCAT RECIPE - FOOD.COM

Skylike Chili - Skyline Chili Copycat Recipe - Food.com image

A copycat of Skyline Chili, true Cincinnati chili, except it's less greasy! I combine all the dry spices times ten and keep the "Skyline Spice Mix" in a jar cannister. One batch of chili will use 3/8 cup of spice mix. The spice mix is also tasty as a meat rub for steak, pork and chicken.

RED CHILI SAUCE (TO BE USED WITH TRADITIONAL TAMALES ...

Red Chili Sauce (To Be Used With Traditional Tamales ... image

This is the recipe I use to make recipe #15286. For an online tamale making tutorial, including pictures, please see http://www.recipezaar.com/bb/viewtopic.zsp?t=188623 posted in the Mexican cooking forum.

Total Time 1 hours 5 minutes

Prep Time 30 minutes

Cook Time 35 minutes

Yield 4 cups

Number Of Ingredients 6

15 large dried chilies (such as Anaheim, New Mexico, California, or pasilla)
4 -5 garlic cloves
2 teaspoons ground cumin
1 teaspoon salt
2 teaspoons all-purpose flour
2 teaspoons olive oil or 2 teaspoons melted shortening

Steps:

  • Remove stems and seeds from dried chili peppers.
  • Place peppers in a single layer on a baking sheet.
  • Roast in 350°F oven for 2 to 5 minutes or until you smell a sweet roasted aroma, checking often to avoid burning.
  • Remove from oven and soak in enough hot water to cover for about 30 minutes or until cool.
  • Put peppers and 2 1/2 cups of the soaking water into a blender (save the remaining soaking water).
  • Add garlic, cumin and salt.
  • Cover and blend until smooth.
  • In a 2-quart sauce pan, stir flour into oil or melted shortening over med heat until browned.
  • Carefully stir in blended chili mixture.
  • Simmer uncovered for 5 to 10 minutes or until slightly thickened. (If sauce gets too thick, stir in up to 1 cup of the remaining soaking water until you reach the desired thickness) Use this sauce for traditional tamales, recipe #15286.
  • Note: When working with chilies, use rubber gloves to protect your skin, and avoid contact with your eyes. Wash hands throughly with soap and water to remove all of the chili oils.

CHILI VERDE (COLORADO GREEN CHILI) : RECIPES : COOKING ...
Chile Verde - a favorite in Colorado - gains its rich green color from small, firm and tart tomatillos. Pork shoulder is slowly cooked until tender in the verdant broth - thinner than some bean-and-beef-based chilis - and has subtle heat thanks to milder Anaheim chiles. Serve the chili with tortilla chips and lime wedges after the flavors have concentrated.

  • Heat the remaining oil in a large pot over medium-high heat. Add the pork and sprinkle with salt and pepper. Add the cumin and cook until the pork is golden brown all over, about 15 minutes, stirring as needed. Remove the pork with a slotted spoon and set aside. Lower the heat to medium. Add the chiles, onions, cilantro and garlic to the oil remaining in the pot. Sprinkle with salt and pepper. Saute the vegetables, scraping any brown bits from the bottom of the pot, until the onions are soft and golden, about 10 minutes. Stir in the flour and cook until the flour absorbs the excess liquid and is cooked through, about 3 more minutes. Return the browned pork to the pot along with the tomatillos and chicken stock. Bring to a boil, reduce to a simmer and cover with the lid. Cook until the pork is tender, about 45 minutes. Uncover and simmer until the liquid reduces slightly and the flavors concentrate, about 15 more minutes. Serve with tortilla chips and lime wedges.

This is Top Secret's version of Heinz's Premium Chili Sauce. I use it all the time and usually have to run to the store to buy it for a recipe. I am posting this so I won't have to run to the store all the time. Per Todd Wilbur: you can make this into Heinz Cocktail Sauce by stirring in 2 teaspoons of prepared horseradish when the sauce has cooled.

HOMEMADE SRIRACHA SAUCE RECIPE - CHILI PEPPER MADNESS
Oct 06, 2017 · If you run out of sauce and need a good siracha sauce substitute, you can use Garlic-Chili Sauce, or consider using Gochujang, Sambal Oelek, or making your own fresh chili paste. Harissa could work in a pinch, but you can always use a Louisiana Style Hot Sauce in place of the sriracha, depending on the recipe.
