1 pound lean ground beef
¾ cup chopped onion
1 15-15.5 ounce can red kidney beans, black beans, or red beans, rinsed and drained
1 14.5 ounce can diced tomatoes, undrained
1 8 ounce can tomato sauce
½ cup dried elbow macaroni (2 ounces)
1 4 ounce can diced green chile peppers, drained
2 - 3 teaspoon chili powder
½ teaspoon garlic salt
½ cup shredded Monterey Jack or cheddar cheese (2 ounces)

Steps:

  • In a large skillet cook meat and onion until meat is brown and onion is tender. Drain off fat.
  • Stir in beans, undrained tomatoes, tomato sauce, uncooked macaroni, chile peppers, chili powder, and garlic salt. Bring to boiling; reduce heat. Simmer, covered, about 20 minutes or until macaroni is tender, stirring often. Remove skillet from heat; sprinkle mixture with cheese. Cover and let stand about 2 minutes or until cheese is melted.

1 pound ground beef
1 cup chopped onion
1/2 cup chopped green pepper
1 garlic clove, minced
1 can (16 ounces) kidney beans, rinsed and drained
1 cup tomato juice
1/2 cup water
4 teaspoons chili powder
1 teaspoon dried oregano
1 teaspoon salt
1/2 cup uncooked long grain rice
1 cup canned or frozen corn
1/2 cup sliced ripe olives
1 cup shredded cheddar or Monterey Jack cheese
Thinly sliced green onions, optional

Steps:

  • In a large skillet over medium heat, cook beef, onion, pepper and garlic until meat is no longer pink; drain. Add the next 7 ingredients; simmer, covered, until rice is tender, about 25 minutes., Stir in corn and olives; cover and cook 5 minutes more. Sprinkle with cheese; cook, covered, until cheese is melted, about 5 minutes. If desired, top with green onions.
