Chili (con Carne) Queso Dip - Comfortable Food image

Is there really anything better than scooping a heaping amount of perfectly seasoned melted cheese chock full of beans and beef on a crispy tortilla chip? I’m not sure there is . . .

Number Of Ingredients 10

2 tbsp butter
1 white onion (chopped)
to taste salt and pepper
1 pound ground beef
2 tbsp taco seasoning
15 ounce diced tomatoes (drained)
1 pound velveeta (cubed (or pepper jack))
15 ounce black beans (drained and rinsed)
1 cup salsa
1/4 cup cilantro (chopped)

Steps:

  • Heat the butter up in a large, deep soup pot, then add the onion, salt and pepper and cook until softened - about 5 minutes.
  • Add the beef and crumble with a spoon and cook until browned.  Stir in the seasoning packet and the diced tomatoes and cook a few minutes, or until combined.
  • Add the velveeta cheese and stir and cook until the cheese is melted, then stir in the beans, salsa and cilantro.
  • Simmer for about 10 minutes to let the flavors combine, stirring often - then pour into a large serving dish of your choice and serve with tortilla chips.

This is my father-in-laws recipe for chili. I love to make it on a cold winter night. Sometimes I serve it with Corn Chips in the bottom of the bowl, topped with the chili and then top the chili with grated cheddar cheese

2 lbs ground beef
1 large onion, chopped
2 garlic cloves, minced
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 (15 ounce) can tomatoes
1 (15 ounce) can diced tomatoes with green chilies
1 (12 ounce) bottle dark beer
1 teaspoon ground cumin
1 teaspoon paprika
2 teaspoons chili powder
1 teaspoon oregano
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Worcestershire sauce
1 (28 ounce) can chili beans

Steps:

  • Saute meat, onions and garlic until done.
  • Add remaining ingredients and simmer for 2 hours.
  • The beer is optional but does add a good flavor and, of course, the alcohol is cooked out during cooking.
