CHICKPEA "CHICKEN" SALAD RECIPE - EATINGWELL



Chickpea

This chickpea salad is a vegetarian version of a classic chicken salad--and, thus, can be eaten in the exact same way. Let's be clear, though: it doesn't taste like chicken, but it is a delicious (and fiber-packed) vegetarian alternative! Plus, it's easily transportable, perfect for picnics and will surely step up your sad desk lunch.

½ cup canola mayonnaise
3 tablespoons chopped fresh flat-leaf parsley
2 tablespoons chopped fresh dill
1?½ teaspoons country-style Dijon mustard
½ teaspoon kosher salt
½ teaspoon smoked paprika
¼ teaspoon black pepper
2 (15 ounce) cans no-salt-added chickpeas (garbanzo beans), drained and rinsed
½ cup chopped celery (from 2 stalks)
¼ cup finely chopped shallot (from 1 large shallot)

Steps:

  • Stir together mayonnaise, parsley, dill, mustard, salt, paprika and pepper in a bowl until combined. Stir in chickpeas, celery and shallot until mixture is well coated. Store in an airtight container in refrigerator up to 4 days.

2 tablespoons minced garlic
2 tablespoons fresh ginger, peeled and grated
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground red pepper
1 lb boneless chicken breast
1 (15 ounce) can chickpeas, rinsed and drained
2 tomatoes, halved and quartered
1/2 cucumber, halved and quartered
1 teaspoon curry powder
1 tablespoon lemon juice
1/2 teaspoon salt
1 jalapeno pepper, seeded and minced
2 scallions, sliced
2 tablespoons fresh cilantro, chopped
2 tablespoons of fresh mint, chopped

Steps:

  • Combine garlic, ginger, cumin, salt and ground red pepper; sprinkle on all sides of chicken breasts. cover and chill 1 hour.
  • Stir chickpeas and remaining ingredients together; cover and chill.
  • Grill chicken covered with grill lid over medium-high heat 5 minutes on each side. cut into strips. tent with foil to keep warm.
  • Divide chickpea mixture between 2 salad bowls and top with the sliced chicken.
