This is an easy way to make a one-dish meal with little effort. It is also very tasty and my kids love it. You can also use mixed vegetables instead of corn.

2 (16 ounce) cans whole kernel corn, drained
4 skinless, boneless chicken breast halves
2 tablespoons butter
1 tablespoon chopped garlic
½ teaspoon ground black pepper
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread corn into the bottom of a baking dish; add chicken breasts. Cover chicken with butter, garlic, black pepper, and salt. Cover dish with aluminum foil.
  • Bake in the preheated oven until chicken is no longer pink in the center, 30 to 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

boneless skinless chicken breasts (about 1 1/2 lbs.) 

Kosher salt

Freshly ground black pepper

2 tbsp.

butter

cloves garlic, minced

2 tsp.

fresh thyme leaves, plus more for garnish

1 c.

heavy cream

4 oz.

cream cheese, softened

1/2 c.

freshly grated Parmesan

2 c.

frozen corn

Pinch crushed red pepper flakes

Steps:

  • In a large skillet over medium heat, cook bacon until crispy. Remove and drain on a paper towel lined plate. Chop into bite sized pieces.  Season chicken on both sides with salt and pepper. To same skillet, add chicken and cook until no longer pink, 8 minutes per side. Remove from pan and place on plate. Drain excess grease from pan.  Melt butter in skillet and add garlic and thyme. Cook until fragrant, 1 minute. Add heavy cream, cream cheese, and Parmesan and bring to a simmer. Let simmer until thickened, 2 minutes. Add corn and season with salt, pepper, and red pepper flakes. Return chicken to skillet and cook until warmed through, 5 minutes.  Top with bacon and more thyme to serve.

  • 1. Place the bones of the chicken and one or two of the corn cobs into a stock pot and cover with water. Bring to the boil and boil for about 45 minutes. Strain the stock, discard the solids, and set aside.

    2. Heat the butter in a large, deep frying pan over medium heat and fry the onion  until browned, about 5 minutes. Add the garlic and fry for a further minute, then add the flour and fry for a further 2-3 minutes, until the flour forms a mass with the onion. Add the wine and stir until it is absorbed, then add around 2 cups of the stock, a little at a time, until the gravy is the consistency of thickened cream. Season with the dark soy sauce and salt, then stir through the corn kernels and chicken. Simmer for a minute, then stand until the pasta is cooked.

    3. Cook the pasta in plenty of salted water according to packet directions and start to check the texture from around 2 minutes before the recommendeded time. When the pasta is just al dente, transfer to the gravy together with ¼ cup of the pasta water, the parmesan and the extra butter, then mix over medium heat until the gravy has coated the pasta and the butter has melted. Serve with extra parmesan.
