This is a favorite at my house. It's quick and delicious.

Number Of Ingredients 8

1 (8 ounce) package angel hair pasta
1?½ tablespoons olive oil
1 clove garlic, peeled and minced
1 pound skinless, boneless chicken breast meat - cut into bite-size pieces
2 cups water
2 cubes chicken bouillon
3 large tomatoes, cut into wedges
¼ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 5 to 6 minutes or until al dente. Remove from heat, drain, and return to pot.
  • Heat oil in a large skillet over medium heat, and saute garlic 2 to 3 minutes. Stir in chicken, and cook until no longer pink and juices run clear. Drain, and set aside.
  • Bring 2 cups water to a boil in a small saucepan, and dissolve bouillon cubes.
  • Place pot with pasta over low heat, and mix in chicken, water with dissolved bouillon cubes, and tomatoes. Cook and stir for about 5 minutes, until heated through. Sprinkle with Parmesan cheese to serve.

4 Chicken Breasts
1 15-oz can Diced Tomatoes
1 tbsp garlic minced
1 tbsp dry Italian Seasoning Crushed in palm of his hand
1/4 onion chopped (to taste), (up to 1/2)
4 slices Mozzarella Cheese
Angel Hair Pasta
1/2 cup Olive oil

Steps:

  • "Pour olive oil in a frying pan. Add onions and saute until opaque/see through. Add chicken, Italian seasoning, and garlic. Saute until 75% done. When almost done, add can of tomatoes to the pan. Cover and simmer for another 5-10 minutes (or until done). Add slices of Mozzarella to the top of the chicken breasts, cover and melt cheese. Cook Angel Hair pasta as directed on package. Drain the pasta. After the cheese is melted on the chicken, remove the chicken from the pan and add pasta to the pan and stir/toss the tomato mixture with the pasta. "

Recipe like this are great, because they are so extendable to whatever ingredients are on hand, and they only take about 20 minutes to make.
