Yummy chicken wings made from a Memphis-style dry rub.

1 tablespoon dark brown sugar
1 tablespoon sweet paprika
½ tablespoon kosher salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon poultry seasoning
½ teaspoon mustard powder
½ teaspoon freshly ground black pepper
8 chicken wings, or more as needed

Steps:

  • Preheat air fryer to 350 degrees F (175 degrees C).
  • Whisk together brown sugar, paprika, salt, garlic powder, onion powder, poultry seasoning, mustard powder, and pepper in a large bowl. Toss in chicken wings and rub the seasonings into them with your hands until fully coated.
  • Arrange wings in the basket of the preheated air fryer, standing up on their ends and leaning against each other and the wall of the basket.
  • Cook until wings are tender inside and golden brown and crisp on the outside, about 35 minutes. Transfer wings to a plate and serve hot.

Paprika, along with a good bit of salt, plays the dominant role in this fragrant, orange-hued rub, which works great with poultry.

½ cup paprika
¼ cup kosher salt
¼ cup freshly ground black pepper
¼ cup garlic powder
2?½ tablespoons dried oregano
2 tablespoons cayenne pepper
1 pound chicken wings and drumettes
2 tablespoons Butts To Go Wing Rub

Steps:

  • Stir together paprika, kosher salt, freshly ground black pepper, garlic powder, dried oregano, and cayenne pepper in a bowl. Use immediately, or store in an airtight container up to 1 year. Makes 2 cups.
  • Prepare smoker according to manufacturer's instructions with an area cleared of coals to create an indirect-heat area, bringing internal temperature to 215°F; maintain temperature 15 to 20 minutes. Toss chicken wings and drumettes in Butts To Go Wing Rub until liberally coated. Smoke chicken over indirect heat, maintaining temperature inside smoker around 215°F until done, 1 ½ to 2 hours.
