- In a bowl, add the ricotta cheese, spinach, egg, and 2 teaspoons Italian seasoning; stir to combine.
- Cover and chill until ready to use.
- In a large skillet over medium heat, saute the chicken, mushrooms, onion, garlic and 2 teaspoons Italian seasoning in the oil; saute for 5-7 minutes or until the chicken is golden brown.
- Add in the undrained tomatoes, tomato sauce, carrots, and pepper.
- Bring mixture to a boil; lower heat and simmer uncovered, for 15-20 minutes or until mixture is slightly thick.
- Cook the lasagna noodles according to package directions; drain, rinse with cold water, and drain again.
- Prepare an oblong baking dish with nonstick cooking spray.
- Place 3 noodles side-by-side in dish.
- Spread half of the ricotta cheese mixture over the noodles.
- Spread one-third of the chicken mixture over the cheese layer.
- Sprinkle with 2/3 cup mozzarella cheese and 2 tablespoons parmesan cheese.
- Repeat layers ending with noodles.
- Spoon remaining chicken over the top.
- Sprinkle with remaining mozzarella cheese and parmesan cheese.
- Bake, covered, at 350 degrees for 35 minutes.
- Uncover and bake 5-10 minutes longer or until cheese is melted and bubbly.
- Let stand for 15-20 minutes before serving.

- Heat oven to 350°F.
- Cook lasagna noodles according to package directions. Drain; set aside.
- Melt butter in 12-inch skillet over medium heat until sizzling; add onion, mushrooms and zucchini. Continue cooking, stirring occasionally, 6-7 minutes or until vegetables are crisply tender. Stir in all remaining meat sauce ingredients.
- Combine all filling ingredients except mozzarella cheese in bowl. Arrange 3 noodles in greased 13x9-inch glass baking dish. Spread with one-third filling; spoon one-third meat sauce over top. Sprinkle with 1 cup mozzarella cheese. Continue laying with remaining noodles, filling, meat sauce and mozzarella cheese.
- Cover with aluminum foil; bake 50 minutes. Uncover; continue baking 5-10 minutes or until cheese is lightly browned. Let stand 10 minutes before serving.

- Coat a Dutch oven with cooking spray. Add in butter and heat over medium heat. Add in onion and garlic, saute/fry till tender. Stir in eggplant, zucchini, green pepper, chicken, tomatoes, oregano, salt and pepper. Cook over medium high heat 15 min, stirring frequently. Remove from heat and stir in shredded carrot, cold. Combine Ricotta cheese and egg in small bowl. Add in to chicken-vegetable mix; mix well, and set aside. Cook lasagna according to package directions. Drain noodles and set aside. Spread about 1/3 of chicken-vegetable mix in a 13x9x2 inch baking dish. Top with 1/3 of Parmesan cheese, 1/3 of Mozzarella cheese, and 4 noodles. Repeat layers once. Top with remaining chicken-vegetable mix. Reserve remaining cheese. Cover and bake at 350 degrees for 30 min. Uncover and sprinkle with remaining Parmesan and Mozzarella cheese.
