Moroccan Tagine-Style Chicken Thighs | Better Homes & Gardens image

Few things smell better than Moroccan spices as they cook. Throw the kaleidoscope of ingredients for this Moroccan-style chicken into the slow cooker in the morning, then return home later to amazing aromas and fabulous flavors.

½ cup olive oil
8 cloves garlic, minced
4 teaspoons ground cinnamon
1?½ teaspoons caraway seeds, crushed
1?½ teaspoons ground cumin
1?½ teaspoons ground cardamom
? teaspoon cayenne pepper
12 chicken thighs, skinned (4 to 5 pounds total)
1 14.5 ounce can reduced-sodium chicken broth
1 cup dried apricots, quartered
1 cup pitted dates, quartered
3 tablespoons ground almonds
1 teaspoon ground turmeric
¾ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon saffron threads
? cup snipped fresh cilantro
2 tablespoons sliced almonds, toasted
Hot cooked couscous (optional)

Steps:

  • In a small bowl whisk together oil, garlic, cinnamon, caraway seeds, cumin, cardamom, and cayenne pepper.
  • Place chicken in a large resealable plastic bag set in a shallow dish. Add oil mixture. Press air from bag; seal. Cover and chill for 8 to 24 hours, turning bag occasionally.
  • Place chicken in a 4- to 5-quart slow cooker. In a medium bowl combine broth, apricots, dates, ground almonds, turmeric, salt, pepper, and saffron; pour over chicken.
  • Cover and cook on low-heat setting for 8 hours or on high-heat setting for 4 hours. Use a slotted spoon to remove chicken mixture from slow cooker (some meat may fall off the bone); place chicken in a shallow serving dish. Sprinkle chicken with cilantro and sliced almonds. Skim fat from cooking liquid. Serve chicken with cooking liquid and, if desired, couscous.

Serve the finished meal boiling hot and eat it the traditional way -- straight from the clay tagine. By the way, I have adjusted this recipe to use chicken breasts (which are more common in the West) but in Morocco you would more likely get a cut such as a thigh. Any piece of chicken will work just fine.

Like many dishes that rely on combinations of spices, a tagine, which is a slowly braised stew, may look more intimidating to cook than it is. Even with shortcuts, the results are exotic in flavor and appearance. My version of this tagine may not compare to those that begin with toasting and grinding spices and peeling grapes, but it is easily executed and, I think, divine. Some things to look out for: First, work with dark-meat chicken only and be aware that tagines are on the dry side, so don't add liquid to the sauce unless it is threatening to burn. Home-cooked chickpeas and fresh tomatoes are, of course, preferable to canned varieties, but in this dish the differences are not marked. Do, however, use a vanilla bean, not vanilla extract.

It is a dish steeped in the flavors of North Africa, but also of France. Chicken serves as the protein, bathed in a blend of North African spices — cinnamon and coriander, turmeric, ginger powder and cardamom — combined with tomatoes, saffron and a little stock. Preserved lemons and olives added at the end provide bite. Tagines are often cooked with root vegetables and dried fruits. Boulud, who famously grew up on a farm, in Lyon, uses cauliflower. ‘‘It is maybe a little more French approach to the tagine,’’ he said. Blanching the cauliflower and tomatoes before cooking them may cause some cooks to blanch themselves. But the effort is worth it.

  • Heat 50ml of vegetable oil in a large pan over medium heat. Add your chicken thighs skin side down and cook for four minutes, before turning over and cooking for a further two. Remove from pan and set aside.  In the same pan, add the onion and garlic and cook for 8 minutes, or until the onions are soft and translucent. Do not pour away any of the fat from the chicken skin – this adds lots of flavour!  Add cumin, coriander, paprika, ground ginger, cinnamon sticks, and harissa, cook for a further 2 minutes. Add the chicken stock, chopped tomatoes and saffron water then stir in the apricots, sultanas, chickpeas, preserved lemon, olives, and honey. Finally add the chicken thighs back to the sauce, ensuring they are submerged. Bring the pan back to the boil and then reduce to a simmer, cook for 40 minutes until the sauce is reduced and the chicken is coming away from the bone Meanwhile, bring 500ml of salted water to a boil in a saucepan. Rinse the couscous in cold water and add to the boiling water, stir and reduce to a simmer.  Cook for 8 minutes and then drain, add back to the pan, and allow to steam for 10 minutes.  Stir through the chopped mint before serving Finally before serving stir the chopped coriander through the tagine. To serve add couscous to a bowl, top with the chicken tagine and the flaked almonds.
