I adopted this recipe from the Recipezaar account, and I'm so glad that I did. This has become a regular addition to my OAMC and I have created a public cookbook filled with recipe ideas using this recipe. This is a three-ingredient wonder that's easy (5 minutes of your time), delicious and versatile.

3 tablespoons taco seasoning, I use Bulk Taco Seasoning Mix
1 cup chicken broth
1 lb boneless skinless chicken breast

Steps:

  • Dissolve taco seasoning into chicken broth.
  • Place chicken breasts in crock pot and pour chicken broth over.
  • Cover and cook on low for 6-8 hours.
  • With two forks, shred the chicken meat into bite-size pieces.
  • To freeze, place shredded meat into freezer bags with the juices.
  • Press out all the air and seal.

"I’ve always just used the McCormick packets and loved the way it tasted. . . I don’t think I’ll ever use those packets again. My son loves these and requests them often. . .a big deal, if you knew my son! They tasted really fresh and had a lot less sodium than the packet seasoned chicken. You can make this in double or triple batches or more and it will keep in an airtight container for about 6 months in your pantry."

2 Pounds Boneless Skinless Chicken Breasts Thawed
3 Teaspoons Chili Powder
2 1/2 Teaspoons Paprika
2 1/4 Teaspoons Cumin
1 1/4 Teaspoons Onion Powder
1/4 Teaspoon Garlic Powder
Dash Cayenne/Red Pepper
1/4 Cup Water

Steps:

  • "Mix all spices together in a small bowl. (One batch makes 9 tsp seasoning, and there are about 2 heaping tablespoons of seasoning in a McCormick taco seasoning packet. This can be stored in an airtight container for up to six months if you choose not to use it all.) Cook chicken until done and then dice. Place the meat in a large pan and added one batch of seasoning to about two pounds (maybe a litttle less) of your cooked, diced chicken. Add the 1/4 cup of water to the pan as well and cook the chicken over medium high heat, stirring frequently, until the meat is heated through and the water had evaporated. This recipe can be used with either corn or flour tortillas/taco shells. Garnish with cheese, lettuce, tomato or anything else you typically put on your tacos. Enjoy! "

  • Into a medium-size pot, add chicken breasts, the halved onion, garlic cloves, bay leaves, black peppercorns, and 2 teaspoons of salt. Cover with water by about ½” and bring to a boil. Reduce heat to a simmer, cover, and cook until the internal temperature reaches 165º at the thickest part of the breast, about 10 to 15 minutes. Transfer breasts to a cutting board. Add the tomatoes to the simmering cooking liquid. Cook for 2 to 3 minutes, or until the tomatoes have slightly softened and the skin begins to peel away. Into a blender, add the peeled tomatoes. cooked onion halves, garlic cloves, chipotles, adobo sauce, cumin, oregano, and ½ cup of the cooking liquid. Blend until smooth, then season with salt and pepper to taste. In a large skillet over medium high heat, heat oil until it shimmers. Add sliced onion and cook until slightly softened and beginning to take on some color, 4 to 5 minutes. Meanwhile, shred the chicken breasts. Into the skillet, carefully pour in the tomato mixture. (There may be some splattering, but the more you stir the less there will be.) Bring the sauce to boil, then reduce to a simmer. Cook until the sauce reduces a bit and thickens slightly, about 5 minutes. Add the shredded chicken and stir, breaking up the bigger shreds. Cook for an additional 3 to 4 minutes, or until the chicken has heated through. Occasionally stir to coat chicken in the sauce. Spoon chicken onto corn tortillas and top with minced onion, cilantro and avocado. Serve with lime wedges.
