I came up with this chicken Stroganoff as a way to use up roasted chicken. It was a hit. I'm usually the only one in my family who loves noodles, but even our 9-year-old son enjoys this recipe because its topped with creamy chicken. —Laura Schimanski, Coaldale, Alberta

4 bacon strips, diced
1 pound boneless skinless chicken breasts, cut into 1/4-inch strips
1 medium onion, chopped
2 jars (4-1/2 ounces each) sliced mushrooms, drained
2 garlic cloves, minced
1-1/2 cups chicken broth
1/2 teaspoon salt
1/8 teaspoon paprika
Pepper to taste
2 tablespoons all-purpose flour
1 cup sour cream
Hot cooked noodles
Additional paprika, optional

Steps:

  • In a large skillet, cook bacon until crisp. Drain, reserving 2 tablespoons drippings; set bacon aside. , In the drippings, cook the chicken, onion and mushrooms until the chicken is no longer pink. Add garlic; cook 1 minute longer. Add the broth, salt, paprika, pepper and bacon. Cover and simmer for 10 minutes. , Combine flour and sour cream until smooth; add to the skillet. Bring to a boil; cook and stir until thickened, 2 minutes. Serve with noodles. If desired, sprinkle with paprika.

2 tablespoons butter
1 package (20 oz) boneless skinless chicken breasts, cut into 1 1/2x1/2-inch strips
2 packages (8 oz each) fresh sliced cremini mushrooms
1 medium onion, thinly sliced
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup Progresso™ chicken broth (from 32-oz carton)
1/2 cup sour cream

Steps:

  • In 12-inch nonstick skillet, melt 1 tablespoon of the butter over medium-high heat. Add chicken; cook 6 to 7 minutes, stirring occasionally, until chicken is no longer pink in center. Remove to plate.
  • In same skillet, melt remaining 1 tablespoon butter. Add mushrooms and onion; cook 5 to 6 minutes, stirring occasionally, until onions are tender. Stir in flour, salt and pepper.
  • Reduce heat to medium. Add chicken and broth; cook 3 to 4 minutes, stirring occasionally, until slightly thickened. Stir in sour cream until well blended and heated through.

    1. Cook the rice in a medium pan of boiling salted water over a medium heat for 25 minutes, or until tender, then drain well.
    2. Tip back into the pan, season with black pepper, cover with a lid and keep to one side.
    3. Meanwhile, pick and roughly chop the parsley leaves, finely chopping the stalks, then finely slice the mushrooms and peel and finely chop the garlic.
    4. For the quick pickle, peel the red onion, slice it as finely as you can and tip into a bowl with the vinegar, parsley and a good pinch of sea salt. Scrunch together and put aside.
    5. Slice the chicken into 2cm strips and place in a mixing bowl.
    6. Add the paprika and add ½ a tablespoon of oil, then finely grate in the lemon zest. Season with a good pinch of salt and pepper and toss together.
    7. Heat 1 tablespoon of oil in a medium frying pan over a high heat, add the mushrooms and garlic and fry for 4 minutes, or until softened and lightly golden, stirring occasionally.
    8. Next, add half the quick pickle, fry for 1 further minute, then tip onto a plate and return the pan to the heat.
    9. Throw in the chicken and fry for 5 to 6 minutes, or until golden and cooked through, stirring frequently.
    10. Add the mushroom and onion mixture back to the pan with the spinach, stir well and cook until the spinach has wilted.
    11. Remove from the heat, stir in the sour cream, squeeze in the lemon juice and season to taste.
    12. Sprinkle with the remaining quick pickle and serve with the rice.
