A larger version of my < 300 dish... Super easy & super tasty.

Cook Time 10 minutes

Yield 1 Portion

Number Of Ingredients 9

1 Chicken Breast
100 g Mixed Pepper
100 g Red Onion
100 g Asda Mushrooms
10 Sprays Garlic Spray Oil
2 Squeze Garlic Puree
1-2 Pinch Black Pepper
1 tsp Dark Soy Sauce
1 tsp Light Soy Sauce

Steps:

  • Dice up Chicken Breast or cut in to Strips.
  • Fry up the Chicken Breast on a medium to high heat with Garlic Spray Oil & Black Pepper, don't go mental with cooking as you are only looking to basically cook the outside and give a nice colour.
  • Add some Soy Sauce & Garlic Puree about half of what you will use total and cook Chicken for another 1-2 minutes.
  • Add Veg and turn up heat to full for a couple of minutes then add the rest of the Soy Sauce & Garlic Puree and turn off heat while cooking on the remaining heat for a couple of minutes.

1/4 cup light soy sauce
2 tablespoons sugar
1 tablespoon cider vinegar
1 tablespoon ketchup
1/2 teaspoon ground ginger
2 cloves garlic, minced
1 lb boneless skinless chicken breast, cut in strips
2 tablespoons vegetable oil
1 (16 ounce) package frozen stir fry vegetables
1 (16 ounce) can unsweetened pineapple chunks, drained (serve over hot cooked rice)

Steps:

  • In a small bowl combine the first 6 ingredients, set aside.
  • In a large skillet or wok, stir fry chicken in oil for 5 to 6 minutes until juices run clear.
  • Add vegetables& stir fry 3-4 minutes till crisp-tender.
  • Stir in pineapple and soy sauce mix.
  • Heat through.
