This was my grandmother's recipe. She was a preacher's wife and frequently entertained and/or participated in pot-lucks. It makes enough to fill 2 casserole dishes. My family and others who have eaten it always love it. I usually use one casserole to serve when I have company and freeze a smaller one to use later with just the family.

Cook Time 30 minutes

Yield 2 casseroles

Number Of Ingredients 12

4 -5 lbs hen, deboned (or use boneless chicken)
1/2 lb spaghetti noodles
1 onion, chopped
1 green pepper, chopped
1/2 can mushroom (optional)
salt and pepper
1/2 cup butter
2/3 cup flour
1 quart milk
1/2 lb American cheese
1/2 lb old English cheese
1 teaspoon salt

Steps:

  • Stew the hen.
  • Debone and tear/cut into small pieces.
  • Cook the, onions, green peppers and spahetti (according to package directions), in the water used to boil the chicken.
  • Drain water, mix in the chunked chicken, add mushrooms if desired.
  • Cream Sauce Melt butter over low heat.
  • Mix in flour and salt.
  • Add milk, cook, stirring constantly till mixture thickens and bubbles.
  • Add cheeses, stirring till melted and blended.
  • Combine all ingredients.
  • Put in casserole dish (es) and bake at 350 for 30 minutes.

3/4 lb uncooked spaghetti, broken in half
1 carton (32 oz) Progresso™ chicken broth
1/2 teaspoon salt
2 cups shredded deli rotisserie chicken
1 container (8 oz) cream cheese spread with jalapeño peppers
1 cup shredded Mexican cheese blend (4 oz)
1 cup diced seeded tomato (1 medium)
2 tablespoons chopped fresh cilantro

Steps:

  • In 4-quart saucepan or Dutch oven, heat spaghetti, broth and salt just to boiling over high heat. Reduce heat to medium; cook 10 to 15 minutes, stirring frequently, until al dente and liquid is almost completely absorbed.
  • Stir in chicken, cream cheese and shredded cheese; cook 3 to 4 minutes, stirring frequently, until cheese is melted and hot. .
  • Stir in tomato until well blended. Sprinkle with cilantro. Serve immediately
