- Deseed Red Chili Pepper (2) and finely dice. Grate Garlic (3 clove) and Fresh Ginger (1 piece). Add all into a small bowl.
- In the same bowl, add Brown Sugar (2 tablespoon), juice of the Lime (2), and Soy Sauce (1/3 cup). Mix until well combined.
- Slice Chicken Thigh (2 pound) into 2-inch cubes and thread 4-6 pieces of chicken onto skewers. Add to marinade and set aside for 20 minutes.
- Finely chop Fresh Mint (1/2 cup). Add to Plain Greek Yogurt (1/2 cup) and season with Salt (to taste), and Ground Black Pepper (to taste). Set aside in the fridge until ready to serve.
- Finely dice Lebanese Cucumber (2) and cut Lime (1) into quarters.
- Warm Pita Bread (8) in a dry pan for 2 minutes.
- Grill chicken skewers for 5-8 minutes, turning once halfway.
- Serve chicken skewers with warm pita, yogurt dressing, cucumber, lime, and chopped mint.
