When Popeyes debuted its new crispy chicken sandwich on August 12, 2019, the company was not prepared for the eruption of social media video posts comparing the new sandwich to Chick-fil-A’s classic chicken sandwich. As a result of the apparently unplanned instant viral campaign in which Popeyes almost always emerges as the winner, customers swarmed the stores and waited in long lines to try the now-famous sandwich. The buzz continued to build day by day, and just two weeks after its debut, the sandwich had sold out—a full month ahead of schedule. But sold out or not, you don’t need Popeyes to get the great taste combo of the crispy buttermilk breaded chicken breast, soft buttered brioche bun, mayo, and pickles. Fortunately, I was able to get my hands on several of the sandwiches before they were gone and cranked out a Popeyes Chicken Sandwich copycat recipe so you can now know how to make the Popeyes fried chicken sandwich any time you want. With these new tricks you’ll be able to make crispy chicken at home that’s flavorful, juicy, and tender, just like Popeyes, coated in a thick golden breading with the same light crunch. The secret to moist, tasty chicken is to brine it for several hours in a spicy mixture of buttermilk, pepper sauce, salt, and MSG. The buttermilk is slightly acidic, so it will help tenderize the chicken without making it too tough like harsher acids, while the salt enhances the flavor (as does the MSG) and keeps the chicken juicy. The MSG (monosodium glutamate) is an amino acid with a salt-like flavor that at one time was thought to be unhealthy, but is now considered an important culinary additive. Popeyes uses it in their chicken because it provides an essential savory flavor called “umami,” and you cannot make an accurate clone without it. To imitate the light, crispy breading, we’ll use baking powder in the flour. The baking powder forms bubbles in the flour when the chicken cooks so that the breading is tender and crispy, rather than crusty and dense. I found that self-rising flour works great since it conveniently has just the right amount of baking powder and salt already added. But don't use a low-protein self-rising flour like White Lily. That brand is awesome for biscuits, but its low gluten content makes it not stick well on chicken breasts. I used Gold Medal self-rising flour, and it worked great. If all-purpose flour is all you’ve got, that can work as well. I’ve put measurements for using all-purpose flour, plus baking powder and salt, in the Tidbits below. 6 boneless skinless chicken breast halves (4 ounces each)
1/2 cup grated Parmesan cheese
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
3 tablespoons butter, divided
2 green onions, chopped
1 teaspoon minced garlic
1 tablespoon all-purpose flour
1/4 teaspoon salt
1/2 cup whole milk
1 tablespoon sherry or chicken broth
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2 tablespoons diced pimientos
1/2 cup sour cream
1 cup shredded part-skim mozzarella cheese

Steps:

  • Flatten chicken to 1/2-in. thickness. In a large resealable plastic bag, combine the Parmesan cheese, basil and oregano. Add chicken, a few pieces at a time, and shake to coat. , In a large skillet over medium heat, cook chicken in 2 tablespoons butter for 4-5 minutes on each side or until a thermometer reads 170°. Remove and keep warm. , In the same skillet, saute onions in remaining butter for 2-3 minutes or until tender. Add garlic; cook 1 minute longer. Gradually add flour and salt; stir in milk and sherry or broth until blended. , Bring to a boil. Reduce heat; cook and stir for 1-2 minutes or until thickened. Stir in spinach and pimientos; heat through. , Remove from the heat. Stir in sour cream until blended. Spoon over chicken; sprinkle with mozzarella cheese.

This recipe is an adaptation of a dish the chef Angie Mar served at the Beatrice Inn in Manhattan, the chicken crisped in a pan, then napped in a Madeira-laced cream sauce dotted with morels. Which sounds fancy and hard to make but isn't, really. Brown the chicken, and set it aside to rest. Cook the morels in the remaining fat — you could swap them out for another wild mushroom or even button mushrooms in a pinch — and then flash them with Cognac, which you'll find will come in handy again and again once you start cooking with it. (Try it on steak au poivre!) Then build up a sauce with cream and a little butter and crème fraîche for gloss, get the chicken into it and add some fresh savory and tarragon at the end — or just one of those, or neither. Make the dish as you prefer or as you can. It's luxurious, every time.

  • Brine the chicken: For smaller chicken breasts, pound out the thicker end of the breast with a mallet or rolling pin until it is about ½” thick. Slice the breast in half into 2, 4 ounce portions. For larger chicken breasts, lay the single piece flay on a cutting board, holding your knife parallel to the cutting board, and slice the chicken through the center as evenly as possible, butterflying the breast open. Separate the 2 halves and cut each into 4-ounce portions. In a plastic container with a lid, combine buttermilk, cayenne pepper sauce, smoked paprika, garlic powder, pepper, and onion powder and whisk to combine. Submerge the chicken pieces in the marinade and cover the container. Refrigerate  for at least 1 hour, or up to overnight. After the chicken has marinated, remove from the refrigerator and let sit at room temperature for 15 minutes.   Make the spicy mayo: In a small bowl, combine all the ingredients. Cover and refrigerate until ready to use. (This gets better as time passes.) Make the flour dredge: In a small shallow dish or small bowl, whisk the ingredients until combined. Drizzle 3-4 tablespoons of the batter into the flour dredge, and work it n with your fingers. In a large heavy-bottomed Dutch oven with a candy thermometer attached, heat shortening over medium heat until it reaches 310 degrees°. Then turn the heat to medium high. When the temperature reaches 340 degrees°, dip each piece of chicken (working quickly) into the batter and then straight into the flour dredge. Toss or shake the chicken in the flour, making sure that the chicken is fully coated with extra flour/batter bits. Add battered chicken to the oil. After you drop the chicken in the oil, adjust the heat to medium high. The temperature should drop almost immediately, easily getting as low as 315°. (Be sure to regulate the temperature so that the oil doesn’t get lower than that.) Fry the chicken, flipping occasionally, until the crust is completely golden  and the chicken has cooked through, about 6-7 minutes. Keep a close eye on the temperature as it will begin to climb again in the final few minutes; don’t let it get above 350 degrees. Once cooked, transfer the chicken to a clean baking sheet, and keep warm in an oven set to 200°. Heat a brioche bun in the microwave for 10 seconds. (Popeyes does not toast their buns.) Spread a layer of spicy mayo on each side, and add 3 pickle slices to the bottom bun.  Add a piece of fried chicken, sandwich with a top bun, and serve.
