Great picnic or lunch sandwich, with a salsa twist. For a spicier version, add some finely chopped jalapeno chile peppers! It's a wrap!

2 (10 ounce) cans chunk chicken, drained and flaked
¼ cup chopped onion
¼ cup mayonnaise
4 tablespoons fresh salsa
salt and pepper to taste
6 (10 inch) flour tortillas
12 lettuce leaves

Steps:

  • In a small bowl combine the chicken, onion, mayonnaise, salsa, salt and pepper. Mix together.
  • Line each tortilla with two lettuce leaves, then divide chicken salad mixture evenly among each tortilla and roll up, or 'wrap'.

This lower-fat chicken salad can be served as a sandwich, in a tortilla, or for a lower carb option, in hollowed-out tomato shells.

½ cup fat-free or low-fat mayonnaise dressing or salad dressing
½ teaspoon curry powder
? teaspoon ground black pepper
2 cups chopped cooked chicken breast (about 10 ounces)
¼ cup sliced green onions
4 romaine leaves or 8 fresh spinach leaves
4 (7 inch) whole wheat flour tortillas (see Tip)
1 medium tomato, chopped

Steps:

  • In a medium bowl, combine mayonnaise dressing, curry powder, and pepper. Stir in chicken and green onion. Cover and chill for 2 to 24 hours.
  • To assemble, place a romaine leaf or two spinach leaves on each tortilla. Top with chicken mixture and tomatoes. Roll up; cut in half to serve. Makes 4 wraps
