Crunchy, sweet and nicely seasoned chicken salad that is real good! My neighbor and friend shared this wonderful chicken salad recipe with me. I double this recipe for my family.

2 cups chicken, cooked and diced
2 tablespoons red wine vinegar
1 1/2 teaspoons lemon juice
1/2 teaspoon sugar
1/4 teaspoon pepper
1/2 cup vegetable oil
1 1/2 teaspoons water
1/4 teaspoon basil
1/8 teaspoon garlic salt
1/8 teaspoon seasoning salt
1/8 teaspoon paprika
1/8 teaspoon dry mustard
1/8 teaspoon dried tarragon
1/8 teaspoon celery seed
1/4 cup mayonnaise
1 cup celery, chopped
1/2 cup cashews
1/2 cup grapes, halved
1/4 teaspoon seasoning salt

Steps:

  • Marinate chicken overnight in marinade ingredients.
  • Drain the juices off the chicken and then add mayonnaise, celery, grapes,cashews and seasoned salt.
  • Mix well and refrigerate until ready to serve.

1 (16 ounce) package rotini pasta
4 cups cubed cooked chicken
1 (20 ounce) can pineapple tidbits, drained
1?½ cups sliced celery
1 cup seedless green grapes, halved
1 cup seedless red grapes, halved
½ cup Onions, spring or scallions (includes tops and bulb), raw
1 (6 ounce) package dried cranberries
1 cup ranch dressing
? cup mayonnaise
2 cups cashews

Steps:

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain and run under cold water. Drain again and transfer to a large bowl.
  • Add chicken, pineapple tidbits, celery, green and red grapes, green onions, and cranberries; mix to combine.
  • Stir ranch dressing and mayonnaise together in a second bowl until well mixed. Add to pasta mixture and stir to coat.
  • Refrigerate for at least 1 hour before serving.
