Prosciutto-Wrapped Stuffed Chicken Breasts with Figs ... image

Rachael shares her "delicious and ridiculously easy" chicken breasts stuffed with figs, rosemary + cheese and wrapped in prosciutto.

Number Of Ingredients 11

4-6 boneless
skinless chicken breasts
Salt and pepper 
12-18 slices thin
but not shaved prosciutto di Parma
8-12 figs
chopped
or 1 cup fig spread or jam
4-6 teaspoons finely chopped rosemary
12-16 ounces gorgonzola dolce or 2 packages of Boursin (soft garlic-and-herb cheese)
2-3 tablespoons EVOO

Steps:

  • Butterfly the breasts by slicing horizontally across each breast, but not all the way through, then use a mallet to evenly pound the chicken to ½ inch thick
  • Season chicken with salt and pepper
  • Arrange and layer 3 slices of ham and position chicken breasts on top
  • Cover with figs or spread and top with rosemary and cheese, then roll and wrap snuggly
  • Heat oven to 375°F

  • 5-Inch Deep Frying Pan with Helper Handle Heat a nonstick skillet over medium to medium-high heat with EVOO
  • Skewer the chicken with long picks or metal skewers
  • Cook the chicken seam-side side down (lightly brown the ham and and turn), 7 to 8 minutes total
  • Transfer to oven and cook 7 to 8 minutes more

A base recipe for tender chicken breast stuffed with cream cheese and chives wrapped tightly within crispy bacon. Make it as written or add more flavors!

Number Of Ingredients 4

2 pound chicken breasts (boneless and skinless)
8 ounce cream cheese (softened)
1 tablespoon chives (chopped)
12 slices bacon ((3 pieces per chicken breast))

Steps:

  • Preheat oven to 375 degrees F.
  • In a skillet over medium heat, cook bacon until it begins to curl and turn red - you want it to be partially cooked but still flimsy. Place bacon on a paper towel while preparing other ingredients.
  • In a small bowl, mix together cream cheese and chives. Set aside.
  • Place chicken breasts in a Ziploc bag. Using a rolling pin or meat tenderizer, flatten chicken breasts until they're about 1/4 inch thick.
  • Spoon a portion of the cream cheese mix and spread it in the center of the chicken breast, keeping at least a 1/2 inch gap from the edges clear.
  • Starting with the smallest end, roll up the chicken breast. With the seam side of the chicken facing up, wrap pieces of bacon around it so that the ends of the bacon are tucked beneath the chicken. Wrapping this way should secure the bacon and keep the chicken wrapped. If needed, use toothpicks to help keep the chicken wrap together.
  • Place chicken in a 9x13 baking dish and bake for 30 minutes. Turn oven to broil for 5 minutes to crisp the bacon. If desired, sprinkle more fresh chopped chives on top.
  • Serve immediately.

  • Pre-heat the oven to 200 degrees 

    Slice open the chicken breasts lengthways and fill with 100g of the mozzarella slices – about 4 pieces of cheese for each piece of chicken. 

    Season the inside with a pinch of salt and pepper, thyme in each, close up the chicken and carefully by wrapping the breasts in 2 slices of the Prosciutto. Place the chicken in an oven proof dish, drizzle with olive oil and place the garlic in oil, and sprinkle over the last of the thyme, bake for 30-35 minutes. 

    When there is 5-6 mins left on the chicken, boil some water and add the asparagus – blanch for 5 mins

    Serve together, with some of the garlic oil spooned over. We also served ours with Taste the Difference potato Dauphinoise
