Italian Chicken Packages | Just A Pinch Recipes image

These have a terrific flavor and make for a wonderful presentation. Try them at your next dinner party for something a little bit different.

Number Of Ingredients 7

- olive oil, extra virgin
6 - chicken breasts, boneless and skinless
2 cup(s) mozzarella cheese
3 cup(s) zucchini, sliced
6 - tomatoes, sliced
- fresh basil
- salt and pepper to taste

Steps:

  • Cut six pieces of foil large enough for one chicken breast and vegetables. Brush foil with olive oil. Set aside.
  • Divide vegetables evenly between pieces of foil and sprinkle with salt and pepper. Chop basil and scatter on top of vegetables.
  • With sharp knife cut the chicken breast at regular intervals. Place a slice of mozzarella cheese in each cut of chicken.
  • Wrap the foil to close the chicken and vegetables tucking in the ends. Place on a cookie sheet and bake in a 400 oven for 30 minutes.
  • To serve unwrap package and accompany with wild rice.

1 Package of corn husks
1 cup Vegetable shortening (Room temperature)
1/2 cup Chicken broth (Made in this recipe)
1/2 cup Vegetable broth (Made in this recipe)
2 cups Corn flour (also called masa harina, masa flour, or Maseca brand)
2 tbsp Baking powder
1 tbsp Salt
1 Chicken breast, cooked and shredded
1 lb. Tomatillos
2 cups Water
1 White onion
1 Poblano chili
1 clove Garlic
1 tbsp Salt
1 tsp Pepper

  • Soak the Corn Husks
  • Prepare Chicken and Broth
  • Make the Salsa
  • Prepare the Filling
  • Make the Masa
  • Test the Masa
  • Assemble Your Tamales
  • Steam Your Tamales
  • Serve and Eat Your Tamales!
