Chicken & Hominy Stew with Greens Recipe | EatingWell image

Have a healthy weeknight meal with this easy chicken stew recipe. We like the bitter bite of mustard greens in this slightly spicy stew, but any dark leafy green will be delicious. The cabbage on top adds crunch.

1 pound boneless, skinless chicken thighs, trimmed
2 teaspoons ground coriander
2 teaspoons ground cumin
2 tablespoons extra-virgin olive oil
1 medium onion, chopped
3 cloves garlic, chopped
1 bunch mustard or collard greens, stemmed and coarsely chopped
4 cups low-sodium chicken broth
1 15-ounce can hominy (see Tip), rinsed
½ cup tomatillo salsa
1 cup shredded red cabbage
¼ cup reduced-fat sour cream
Lime wedges for serving

Steps:

  • Pat chicken dry and sprinkle with coriander and cumin. Heat oil in a large pot over medium heat. Add the chicken and cook, flipping once, until browned on both sides, 6 to 7 minutes total. Transfer to a clean plate.
  • Add onion and garlic to the pot and cook, stirring occasionally, until tender, 3 to 4 minutes. Add greens and cook, stirring, until wilted, about 1 minute. Add broth, hominy and the chicken along with any accumulated juices. Bring to a simmer. Adjust heat to maintain a simmer, cover and cook until the chicken is very tender, about 15 minutes.
  • Remove the chicken to a clean cutting board and shred with two forks. Return to the pot and stir in salsa. Serve the stew topped with cabbage and sour cream, with lime wedges, if desired.

1/2 onion, chopped
1/2 green bell pepper, chopped
1 stalk celery, chopped
3 garlic cloves, minced
1/2 tablespoon chili powder
1 teaspoon cumin
1/4 teaspoon dried ancho chile powder
3/4 teaspoon dried oregano
1/2 cup chicken stock
4 skinless chicken thighs (about 3/4 lbs)
1 1/2 cups cooked hominy (about 1 can)
1 1/2 cups tomatillo salsa

Steps:

  • Combine first 9 ingredients (through stock) in medium crock pot (I used a 3 1/2 quart - don't use anything bigger unless you plan to double the recipe).
  • Lay chicken on top of this mixture, and top with hominy and salsa.
  • Cover and cook on low for 6-7 hours.
  • Use two forks to pull apart the chicken, and remove bones if you used bone-in meat.

  • Sprinkle chicken with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Add 2 teaspoons oil to pan; swirl to coat. Add half of chicken; sauté 3 minutes. Add browned chicken to onion mixture. Repeat procedure with remaining chicken and 2 teaspoons oil. Combine remaining 1 cup broth, tomatillo mixture, onion mixture, and hominy in pan over medium-high heat, and bring to a boil. Cover, reduce heat, and simmer for 45 minutes, stirring occasionally. Stir in 1/2 teaspoon salt and 1/4 teaspoon black pepper. Ladle 1 2/3 cups stew into each of 6 bowls, and top each with 1 tablespoon sour cream. Garnish with cilantro, if desired.
