4 boneless skinless chicken breasts
1/2 teaspoon garlic salt
2 green bell peppers, sliced into strips
1 large white onion, sliced into strips
2 garlic cloves, minced
1 cup mozzarella cheese
2 tablespoons butter
4 tablespoons olive oil
1/2 cup water

Steps:

  • Sprinkle chicken with garlic salt. In skillet, melt 1 tablspoon butter and add 1 tablespoon olive oil.
  • Cook chicken over medium high heat until done. Sprinkle 1/4 cup mozzarella on each breast. Remove from heat and allow cheese to melt.
  • To another skillet, add remaining olive oil and butter.
  • Add onions, peppers and minced garlic and cook on medium high. Add water and cover.
  • Cook until peppers and onions are tender, stirring often. Remove lid and cook until water evaporates.
  • Place peppers and onions over chicken and serve.

This recipe is my go to every time!! I love it. Whenever I make it for gatherings, the guests rave about how tasty it is.

1 - chicken cut in pieces. i use all dark meat.
1 - green pepper sliced.
1 can(s) medium onion peeled and sliced
2 - garlic cloves, sliced thin - or may use garlic powerd
- salt and pepper

Steps:

  • Heat oven to 375 degrees. Rinse the chicken parts in clear water.
  • Place tin foil in the bottom of roasting pan (I use a 13 x 9 x 2 pan) and leave enough to cover the chicken once it is seasoned.
  • Salt and pepper the chicken to your taste, and this is when you will sprinkle with garlic powder if using rather than fresh.
  • Cover the chicken with green pepper, onion, and sliced garlic cloves Drizzle with olive oil over the entire top of the chicken and vegetables.
  • Cover with the extended piece of the tin foil. Place in oven for 30-35 minutes and then pull the foil back from the chicken. Return the chicken to the oven for another half hour or until browned to your liking. Do not overcook. Serve the vegetables over the chicken. DELISH!
