slices bacon, chopped
1 red onion, chopped
1/2 lb. boneless skinless chicken breast, chopped into 1" cubes
1 large flatbread
1/2 c. shredded pepper jack
1/4 c. ranch dressing
1 tbsp. sriracha
1/2 avocado, thinly sliced
1/4 c. Thinly sliced green onions

Steps:

  • Preheat oven to 350°. Meanwhile, cook bacon in a large skillet over medium heat until crispy. Drain cooked bacon on paper towels but leave the fat in the pan. Add onions and cook in bacon fat until softened. Add chicken to the pan and sauté, stirring occasionally, until cooked through, 6 to 8 minutes. Remove from skillet. Place flatbread on a large baking sheet. Sprinkle cheese over flatbread, then top with chicken and bacon. Bake until the cheese is melted, about 10 minutes. Meanwhile, mix together ranch and Sriracha in a small bowl. Top freshly baked flatbread with avocado and green onions. Drizzle with spicy ranch and serve.

4 (5-oz. each) Hy-Vee true boneless skinless chicken thighs
3 tbsp. of Gustare Vita balsamic vinegar
2 tbsp. of Gustare Vita olive oil
1 tbsp. of garlic
1 tsp. of Hy-Vee Dijon mustard
0.25 tsp. of Hy-Vee salt
0.25 tsp. of Hy-Vee ground black pepper
1 loaves of Hy-Vee frozen bread dough
0.75 c. of Hy-Vee Thai peanut sauce
4 oz. of Soiree fresh mozzarella cheese
1 small red onion
0 Fresh Italian parsley

Steps:

  • 1.

    Preheat oven to 400 degrees. Pat chicken thighs dry with paper towels; place in a large resealable plastic bag. Whisk together balsamic vinegar, 1 tablespoon Gustare Vita olive oil, garlic, Dijon mustard, and 1/4 teaspoon each salt and black pepper in a small bowl.

    Pour mixture over chicken, close bag. Turn to evenly coat chicken; marinate at least 10 minutes. Remove chicken from marinade; discard marinade. Place chicken on a parchment-lined rimmed baking pan. Bake 40 to 50 minutes or until the internal temperature reaches 165 degrees. Cool slightly and shred; set aside.

    Increase oven temperature to 425 degrees. Brush a large baking sheet with 1 tablespoon olive oil. Pat bread dough into an 11x15-inch rectangle on prepared baking sheet. Bake 12 minutes or until lightly browned. Remove from oven; spread peanut sauce onto crust and sprinkle with fresh mozzarella. Top with shredded chicken and red onion slices.

    Bake 8 to 10 minutes or until crust is golden and cheese is melted. Garnish with fresh parsley, if desired.
