6 ounces chicken breasts (boneless, skinless)
1 tablespoon oyster sauce
4 white potatoes
1 tablespoon olive oil
1 teaspoon basil
1/2 teaspoon garlic salt
1/4 teaspoon cayenne pepper
2 eggs
1/4 cup skim milk
1/2 cup flour
1 tablespoon cornstarch
1/2 teaspoon salt
1/2 teaspoon basil
1/4 teaspoon black pepper
1/4 cup olive oil

Steps:

  • Tenderize chicken breast and marinade in oyster sauce overnight. Peel and cut potatoes with a french fry cutter. Toss with olive oil coating evenly. Place single layer on a cookie sheet. Bake in 350 degree oven for 30 minutes, turn all and bake ten minutes more or until golden brown. Meanwhile, Stir together the flour, cornstarch and remaining spices. Cut chicken breasts in 1/2/ inch strips. Soak strips in milk then coast completely with flour mixture. Beat eggs well and coat floured chicken strips in the egg. Fry in olive oil (up to 1/2 cup) on medium high heat for 15 minutes, turning regularly until all sides are golden brown. Drain on paper towel. Serve with ketchup and cold beer. Enjoy!

1 lb chicken wings (cleaned
skinned
rinsed with cold water. drained)
2 cups oil for deep frying
Salt to taste
¼ cup all-purpose flour or cornstarch
½ tsp garlic powder
1 tsp coarsely ground black pepper
3 cloves garlic (minced)
½ cup chopped onion. 2 large potatoes (washed
peeled
and cut into strips)
Salt to taste
2 cups oil for deep frying. 3 tbsp tomato paste
½ cup ketchup
2 garlic cloves (minced)
1 tsp about cayenne pepper or to taste
2 tsp sugar or honey.

Steps:

  • Combine all ingredients in a large zip lock bag or sealable bowl, mix until well blended. Add the chicken wings to the mixture, then shake or stir to coat evenly. If you are using a zip lock bag, close it and put it into the fridge for at least 30 minutes, or the preferred overnight time is one day before cooking them to make it more delicious. For those who prefer a shorter period of waiting, you can also skip this step especially. If you don't have enough time but if ever, make sure that you put the marinated chicken wings back into the fridge once done with frying (for future use). Prepare your deep fryer for frying the marinated chicken wings. Once the oil is hot enough, fry a batch of the chicken wings for about 5 to minutes or until it turns brown and crispy, then drain with paper towels. Repeat this process for other batches.
  • In a small saucepan, combine all ingredients from the Sauce part and simmer over medium heat, stirring from time to time until thoroughly cooked at low heat temperature. Keep stirring so it won't stick on your pan or scorch. You can also lower the flame if needed after every 2-3 minutes of cooking time (it takes around 12 to 15 minutes). It would help if you cooked this first before you put it together with fried chicken wings. Heat the oil at 350 degrees F (175 degrees C) in a deep fryer or pan. Fry the potatoes for about 5 minutes until they turn brown, then take them out with a filter or paper towel for draining excess oil. Put the french fries back into the fryer while it's hot and lower the heat temperature to 200 degrees F (93 degrees C). Cook again for 12-15 minutes or, whether crunchy or soft, depending on what texture you like best. Make sure that once done cooking, put in paper towels again to absorb any unwanted oil from frying them twice the time already. Once thoroughly cooked, your french fries are ready to top with the sauce you made earlier, then serve.
