Summer’s delight, this sandwich is stacked high with chicken, bacon and fresh garden goodness!

1/2 cup mayonnaise or salad dressing
18 slices bread, toasted
12 lettuce leaves
6 slices (3 ounces each) cooked chicken
18 slices tomato (3 medium)
12 slices bacon, crisply cooked and drained
Salt and pepper, if desired

Steps:

  • Spread mayonnaise over 1 side of each slice of toast. Place 1 lettuce leaf and 1 chicken slice on each of 6 toast slices.
  • Cover with second toast slice, mayonnaise side up. Top with lettuce leaf, 3 slices tomato and 2 slices bacon. Sprinkle with salt and pepper.
  • Cover with third toast slice, mayonnaise side down; secure with wooden picks. To serve, cut diagonally into triangles.

There's a real art to creating the perfect chicken club sandwich - get organised by clearing a space and having all your ingredients at the ready!

Number Of Ingredients 10

1 cup cooked chicken, shredded or finely sliced
1/2 cup good-quality mayonnaise
1/2 cup celery, diced very finely
1 tablespoon crushed pineapple, drained well
squeeze of lemon juice
1/2 tablespoon lemon zest
salt and pepper, to season
12 slices of sandwich bread
100 gram softened butter
1 cup celery leaves, roughly sliced

Steps:

  • Mix together the chicken, 1/4 cup mayonnaise, celery, pineapple, lemon juice, zest, salt and pepper. Taste and adjust the seasoning.
  • Lay out your 12 slices of bread and butter each one.
  • Place a generous amount of the chicken mixture onto each of the 4 slices.
  • With the butter-side down, cover each slice with another slice of bread. Now butter it and spread liberally with the remaining mayonnaise.
  • Scatter the celery leaves and add a thin layer with the remaining chicken mix
  • Top with the remaining 4 buttered slices of bread. Press gently.
  • With the palm of your hand, gently hold each sandwich down as you cut the crusts off - a serrated knife works best.
  • Each square sandwich may now be cut into 3 fingers, which will give you 12 tasty chicken club sandwiches.
