This creamy, flavor-rich pasta dish made with campanelle pasta, chicken, spinach and sun-dried tomatoes is incredibly easy but feels extra special. It’s as perfect for company as it is for a family night in.

2 1/2 cups Progresso™ chicken broth (from 32-oz carton)
1 tablespoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1 package (20 oz) boneless skinless chicken thighs, cut in 1 1/2-inch pieces
8 oz uncooked campanelle pasta (2 3/4 cups)
1/2 cup chopped drained oil-packed sun-dried tomatoes with herbs
1 package (8 oz) cream cheese, cut into cubes, softened
1 cup shredded Parmesan cheese (4 oz)
1 package (5 oz) fresh baby spinach leaves

Steps:

  • Spray 5-quart slow cooker with cooking spray. In slow cooker, mix broth, Italian seasoning, salt and pepper flakes.
  • Stir in chicken. Cover; cook on High heat setting 1 1/2 to 2 hours or until chicken is cooked through (at least 165°F). Stir in pasta and tomatoes. Cover; cook on High heat setting 25 to 30 minutes or until pasta is tender, stirring twice.
  • Stir in cream cheese and Parmesan cheese until cheeses melt. Stir in spinach until wilted. Let stand covered 5 to 10 minutes or until slightly thickened. Stir before serving.

1 lb campanelle pasta
2 cups diced cooked chicken
1 bag (12 oz) frozen mixed vegetables
1 can (10 oz) condensed Cheddar cheese soup
1 container (8 oz) sour cream
2 cups shredded Cheddar cheese (8 oz)
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon dried parsley flakes

Steps:

  • Cook 1 lb campanelle pasta as directed on package.
  • Meanwhile, heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In large bowl, mix 2 cups diced cooked chicken, 1 bag (12 oz) frozen mixed vegetables, 1 can (10 oz) condensed Cheddar cheese soup, 1 container (8 oz) sour cream, 1 cup shredded Cheddar cheese (4 oz), 1 teaspoon garlic powder, 1/2 teaspoon salt and 1/2 teaspoon pepper.
  • When pasta is cooked, drain and mix with chicken mixture. Pour into baking dish; top with 1 cup shredded Cheddar cheese (4 oz).
  • Bake 20 minutes. Sprinkle with 1 tablespoon dried parsley flakes just before serving.

Let cook, flipping halfway, until both sides are deeply golden, 4 to 6 minutes per side. Transfer chicken to a plate. Return skillet to medium-low heat. Add oil, panko, Italian seasoning, everything bagel seasoning, salt, pepper, and crushed red pepper flakes. Stirring frequently, cook panko mixture until golden, 5 to 6 minutes. Transfer to a bowl. Return skillet to medium heat and add oil, garlic, pepper, and red pepper flakes, stirring occasionally, until garlic is golden. Add marinara, sugar, and water and bring to a simmer. Add pasta and cook, stirring occasionally, until pasta is al dente and sauce is creamy, about 12 minutes.  Fold in half the mozzarella and Parmesan until melty, then slice cooked chicken on the bias into strips and place on top of pasta.
