Roasted Spicy Mayonnaise Chicken Breasts Recipe - Foo… image

These are very simple and very delish! I usually pound the breasts to about an inch thick, so they cook evenly. Depending on who is coming for dinner, I will add more seasonings to make it more spicy. Before adding the mayo mixture, I season the chicken with a bit of Lawry's salt. This is adapted from Paula Deen, (actually her sons) Food Network.

1/2 cup mayonnaise
1 lemon, zest finely grated
2 teaspoons paprika
1/2 teaspoon celery seed
1/2 teaspoon salt
1 teaspoon black pepper, freshly ground
1 pinch cayenne pepper
4 (8 ounce) boneless chicken breasts

Steps:

  • Preheat the oven to 425 degrees F.
  • Line a rimmed baking sheet with foil.
  • In a small bowl, whisk together the mayonnaise, lemon zest, paprika, celery seeds, salt, pepper, and cayenne.
  • Arrange the chicken on the prepared baking sheet.
  • Slather the mayonnaise mixture over the chicken.
  • Bake until the juices run clear when the chicken is pricked with a fork, about 20 to 25 minutes.
  • Transfer the chicken to a serving platter and serve hot.

2 chicken breasts (skinless, boneless) (about 8 oz each)
4 tbsp mayo
1/4 cup parmesan cheese (shredded)
salt & pepper

Steps:

  • Preheat oven to 350°F (180°C)
  • Wash chicken breast under cold running water and pat dry with a paper towel. Season generously with salt and pepper.
  • In a medium-sized bowl, use your hands to cover the chicken breasts with mayonnaise. Make sure the chicken is fully covered in mayo in a nice even layer.
  • Lightly grease a baking dish with some oil and place the chicken breasts into it. Sprinkle equal amounts of shredded parmesan cheese onto each chicken breast.
  • Bake in a preheated oven for 40-45 minutes until the chicken is fully cooked and the parmesan cheese has turned golden brown. (If you have a meat thermometer it should read 165°F at the thickest part of the chicken to make sure it's fully cooked and safe to eat)
