1 pound chicken breast tenderloins
1 pinch garlic salt, or to taste
1 pinch seasoned salt, or to taste
1 pound uncooked penne pasta
2 tablespoons butter
¼ cup grated Parmesan cheese
2 tablespoons olive oil
1 pound fresh asparagus, trimmed and cut crosswise into thirds
1 pinch garlic salt, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cover a baking sheet with aluminum foil.
  • Spread the chicken breast tenderloins on the baking sheet and sprinkle with garlic salt and seasoned salt.
  • Bake chicken in the preheated oven until no longer pink in the center and the juices run clear, about 15 minutes. Set aside; when cool enough to handle, cut tenderloins into bite-size pieces.
  • Fill a large pot with lightly salted water, bring to a boil, and stir in penne. Cook pasta at a boil, stirring occasionally, until penne are cooked through but still slightly firm, about 11 minutes; drain.
  • Transfer penne back to cooking pot and stir in butter and Parmesan cheese until pasta is coated.
  • Heat olive oil in a skillet over medium heat; place asparagus into the hot oil and sprinkle with garlic salt. Cook and stir until asparagus are tender, about 7 minutes.
  • Transfer penne pasta into a large serving bowl and top with asparagus and chicken tenderloin pieces. Lightly mix asparagus and chicken into the pasta to serve.

This creamy chicken and asparagus pasta is a quick, warming meal all cooked in one pot. The cream cheese adds a silky texture to the sauce, while fresh asparagus and lemon brighten the dish.

2 tablespoons extra-virgin olive oil
1 pound boneless, skinless chicken thighs, trimmed and cut into 1-inch pieces
1 cup thinly sliced leek (white and light green parts only)
1 tablespoon thinly sliced garlic
2 teaspoons fresh thyme leaves, plus more for garnish
8 ounces whole-grain penne or brown rice penne
3 cups unsalted chicken broth
¼ teaspoon salt
1 pound fresh asparagus, trimmed and cut diagonally into 1-inch pieces
2 ounces reduced-fat cream cheese
1 teaspoon grated lemon zest
1 tablespoon lemon juice
2 tablespoons chopped fresh chives

Steps:

  • Heat oil in a large high-sided skillet over medium-high heat. Add chicken in an even layer; cook, undisturbed, until browned on the bottom, about 4 minutes. Stir the chicken; cook, stirring occasionally, until no longer pink, about 2 minutes. Transfer to a plate.
  • Add leek, garlic and thyme to the pan; reduce heat to medium. Cover and cook, stirring occasionally, until the leek is softened, about 4 minutes. Return the chicken to the pan; stir in penne, broth and salt. Bring the mixture to a simmer over medium-high heat. Reduce heat to maintain a simmer; cook, stirring occasionally to prevent sticking, until the pasta is tender and the chicken is cooked through, 9 to 10 minutes, adding asparagus to the mixture during the final 5 minutes of cook time.
  • Remove from heat; stir in cream cheese, lemon zest and lemon juice. Sprinkle with chives and garnish with additional thyme, if desired. Serve immediately.

This stuff is really tasty and so quick and easy! I've had this recipe forever. I have no idea where I got it. I probably jotted it down out of a health food magazine back when pasta was still considered a good choice for healthy eating. I increased the cheese amount because the original recipe kind of skimped on the cheese to make the dish more healthy and of course you could cut back on it if you wanted to, but I'm of the mind that more cheese = more better! The original recipe also called for cooking spray which I've replaced with 2 Tbsp olive oil! Anyway enjoy this one however you'd like!
