- Whisk together the eggs, cream, cayenne pepper, 1 tablespoon salt, and black pepper in a large bowl. In a paper bag, shake together the flour, cornstarch, and 1 tablespoon salt.
- Dip the chicken into the beaten egg mixture, then place into the flour mixture and shake to coat. Place the breaded chicken onto a wire rack; do not stack. Let the chicken rest for 20 minutes to allow the coating to set.
- Heat about 3 inches of oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C). In small batches, fry chicken 5 to 8 minutes until golden brown. Remove chicken, and drain on paper towels. Set aside or keep warm in a a low oven.
- Combine the mayonnaise, maple syrup, horseradish, and mustard powder in a medium bowl. Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
- To assemble the sandwiches: Place 4 waffles on a cookie sheet, top each waffle with 2 chicken tenders, 3 slices of bacon, and 2 slices of Cheddar. Broil the sandwich for a 3 to 5 minutes until the cheese melts. Spread 3 tablespoons of the maple mayonnaise on the remaining 4 waffles and place on top of the sandwich.

- In a medium bowl, combine flour and salt. In a separate bowl, whisk together egg and buttermilk. Pour panko into a third bowl. Working in batches, dredge chicken tenders in the flour mixture then dip in buttermilk mixture. Toss in panko for the final dredge. Meanwhile, pour about 1 1/2” vegetable oil into a large, deep skillet. Heat over medium heat until the oil reaches about 350 degrees F, or until the oil is shimmering. (If a splash of water sizzles when you flick it into the pan, it’s ready.) Working in batches, add 3-4 chicken tenders to the hot oil using tongs. Do not crowd the pan, or the oil will cool! Cook until golden brown on one side, about 2-3 minutes, then flip and cook until the second side is golden and the chicken is cooked through, 2-3 more minutes. Place the fried chicken tenders on a cooling rack lined with paper towels. Brush toasted mini waffles with melted butter. Top the half of the waffles with fried chicken and drizzle with maple syrup. Top with the remaining waffles. Insert toothpick into the center of each waffle slider.

Place two waffles and chicken strips on a rimmed baking pan. Top waffles with cheese slices. Broil 4-inches from heat about 1 minute or until cheese is melted and chicken is crisp. To assemble sandwich, place chicken strips on a cheese-topped waffle; brush with half of syrup mixture. Add remaining cheese-topped waffle; top with omelet and avocado slices, if desired.
