- In a small bowl, combine the mustard, maple syrup, and honey. Stir until smooth, then set aside.
- Cube the chicken breast, then season with salt, pepper, and cayenne.
- In a large bowl, whisk together the egg, milk, vanilla, and oil.
- Sift the flour, baking powder, sugar, and a pinch of salt into a separate large bowl. Add the wet ingredients and stir to combine.
- Add the seasoned chicken to the waffle batter and toss until well coated.
- Heat a waffle iron on the lowest setting.
- Spoon a piece of chicken and some batter into each section. Cook for 8-10 minutes, until the chicken is cooked through and the waffles are golden brown. Repeat with the remaining batter.
- Serve with the sauce for dipping.

Preheat oven to 425 degrees. Combine honey, melted butter, hot sauce, corn starch, and chipotle chili powder in small bowl.

Place chicken tenders on baking sheet; brush with 1/3 of honey mixture. Bake at 425 degrees for 14 to 17 minutes or until internal temperature is 165 degrees, turning and brushing with additional 1/3 honey mixture halfway through.

Meanwhile, prepare and bake 6 waffles. Preheat waffle iron according to manufacturer's directions. Combine mix, water, vegetable oil, and red food coloring, if desired; stir until large lumps disappear. Allow batter to rest 4 to 5 minutes before baking. Pour desired amount of batter into lightly greased waffle iron. Cook according to manufacturer's directions.

Cut each waffle into quarters. Cut chicken tenders in half; brush with remaining honey mixture. Sandwich each chicken piece between 2 waffle quarters and skewer with a wooden toothpick.

Let the waffles cool slightly, then cut them into bite-size (about 1-inch) squares and place them in a 250?F oven to keep warm. 3. Make the Fried Chicken: In a medium bowl, whisk the flour with the cornstarch, cayenne pepper, Italian herb seasoning, salt and black pepper to combine. Pour the buttermilk into a shallow, medium-size bowl. 4. Toss the chicken pieces in the flour mixture to coat. Working in batches, dip the floured chicken into the buttermilk, then return it to the flour and toss to coat. 5. Working in batches, add the breaded chicken to the hot frying oil. Don't overfill the pot with chicken, as it will bring down the temperature of the oil. Fry until the chicken is golden brown and floats on the surface of the oil, 3 to 4 minutes.
