Here's what you need: mustard, maple syrup, honey, chicken breast, salt, pepper, cayenne pepper, egg, whole milk, vanilla, oil, flour, baking powder, sugar

? cup mustard
? cup maple syrup
? cup honey
1 chicken breast
1 teaspoon salt, plus a pinch, divided
1 teaspoon pepper
1 teaspoon cayenne pepper
1 egg
¾ cup whole milk
1 teaspoon vanilla
2 ½ tablespoons oil
1 cup flour
½ tablespoon baking powder
1 tablespoon sugar

Steps:

  • In a small bowl, combine the mustard, maple syrup, and honey. Stir until smooth, then set aside.
  • Cube the chicken breast, then season with salt, pepper, and cayenne.
  • In a large bowl, whisk together the egg, milk, vanilla, and oil.
  • Sift the flour, baking powder, sugar, and a pinch of salt into a separate large bowl. Add the wet ingredients and stir to combine.
  • Add the seasoned chicken to the waffle batter and toss until well coated.
  • Heat a waffle iron on the lowest setting.
  • Spoon a piece of chicken and some batter into each section. Cook for 8-10 minutes, until the chicken is cooked through and the waffles are golden brown. Repeat with the remaining batter.
  • Serve with the sauce for dipping.

Everyone at your tailgate party will love these sweet and spicy chicken-and-waffle bites. You can even dye the waffle batter with food coloring to represent your team colors!

Number Of Ingredients 10

0.25 c. of Hy-Vee honey
1 tbsp. of Hy-Vee salted butter
1.5 tsp. of Frank's RedHot original hot sauce
1 tsp. of Hy-Vee corn starch
0.25 tsp. of chipotle chili powder
6 Hy-Vee Market Grille chicken tenders
3 c. of Hy-Vee complete pancake and waffle mix
2.25 c. of water
0.5 c. of Hy-Vee vegetable oil
0 Food coloring

Steps:

  • 1.

    Preheat oven to 425 degrees. Combine honey, melted butter, hot sauce, corn starch, and chipotle chili powder in small bowl.

    Place chicken tenders on baking sheet; brush with 1/3 of honey mixture. Bake at 425 degrees for 14 to 17 minutes or until internal temperature is 165 degrees, turning and brushing with additional 1/3 honey mixture halfway through. 

  • 3.

    Meanwhile, prepare and bake 6 waffles. Preheat waffle iron according to manufacturer's directions. Combine mix, water, vegetable oil, and red food coloring, if desired; stir until large lumps disappear. Allow batter to rest 4 to 5 minutes before baking. Pour desired amount of batter into lightly greased waffle iron. Cook according to manufacturer's directions.

    Cut each waffle into quarters. Cut chicken tenders in half; brush with remaining honey mixture. Sandwich each chicken piece between 2 waffle quarters and skewer with a wooden toothpick.
