A favorite stew recipe in my house as well as that of our frequent dinner guests. Meal in one with bread and butter. Prep time does not include pulling the chicken and pork which can be done a day or so in advance of making the stew.

1 1/2 lbs cooked chicken breasts
1 1/4 lbs cooked pork
2 (14 1/2 ounce) cans diced tomatoes
1 (16 ounce) package frozen whole kernel corn, thawed
1 (16 ounce) package frozen butter beans
1 medium onion, chopped
1 (16 ounce) can chicken broth
1 (12 ounce) bottle Heinz ketchup
1/2 cup white vinegar
1/2 cup Worcestershire sauce
1/4 cup brown sugar, firmly packed
1 tablespoon salt
1 tablespoon pepper
2 -3 tablespoons hot sauce

Steps:

  • I boil 1 1/2 pounds chicken breasts (with bone) and purchase 1 1/4 pounds of smoked pulled pork from our local barbeque joint.
  • If you are unable to get smoked pulled pork and still want the smoked flavor use liquid smoke.
  • In a 6 quart dutch oven, stir together onion, chicken broth, ketchup, vinegar, Worcestershire sauce, brown sugar, salt, pepper, and hot sauce.
  • Add thawed corn and butter beans; stir.
  • Add tomatoes; stir.
  • Lastly, stir in pulled chicken and pork.
  • Cover and simmer over low heat, stirring occasionally, 2 1/2 to 3 hours.

2 tablespoons vegetable oil
1 lb boneless beef roast, trim excess fat
1 lb boneless pork roast, trim excess fat
salt
fresh ground black pepper
1/4 cup red wine
2 medium onions, quartered
4 peeled garlic cloves
1 medium fresh hot pepper, quartered
water, to cover
1 (3 lb) whole chickens, cut into 8 pieces (pick of the chick works well)
2 cups chopped onions
2 cups chopped carrots
1 cup chopped celery
1 cup medium diced bell pepper
1 lb russet potato, peeled and diced
2 cups peeled seeded and chopped tomatoes
1/2 lb fresh green beans, strings removed and cut into 2 inch pieces
2 cups fresh corn kernels (about 4 ears)
spice essence, to season

Steps:

  • In a large, heavy pot, over medium heat, add the oil.
  • Season the beef and pork with salt and pepper.
  • Sear the meat, in batches, for 2 minutes on all sides.
  • Add the red wine to deglaze (about 1 minute).
  • Add the onions, garlic, and hot pepper.
  • Cover with water (approx. 3-4 quarts).
  • Bring to a boil, reduce heat to medium low, and simmer until tender (approx. 3 hours) Season the chicken with salt, pepper and essence.
  • Add the chicken during the last 1 ½ hours of cooking.
  • Remove the meat, chicken and vegetables, set aside to cool.
  • Discard the vegetables.
  • Add the remaining vegetables to the pot.
  • Continue to cook for 1 hour.
  • After the meat is cool, cube the beef and pork into 1" pieces.
  • Remove the skin and bones from the chicken and cube into 1" pieces.
  • Add the cubed meat to the vegetables.
  • Continue to cook for 30 minutes.
  • Re-season if necessary.
  • Ladle into serving bowls.
  • Serve with fresh bread or corn bread.

  • Prepare the meat ahead, marinate them separately using the ingredients above ( first five ingredients) it means you have to prepare 2 sets of the marinate, for chicken and for pork Set aside in the fridge for at least 6 hours but if you can manage, do it overnight. Heat 1/4 cup olive oil and fry the marinated meat, chicken meat first. Just fry them until the meat turns white or the raw look fades. We fry them first in order to seal the natural flavor and tenderness of the meat. Fry the cubed potatoes for 30 seconds and set aside. Using the same pan, add 2 tbsp olive oil and saute garlic and onion.Wait until the aroma comes out. Then add in 3 tbsp tomato paste dissolve in 3 tbsp water. Stir until well mixed and add the fried pork meat. Add in chopped whole tomato together with its juice. Cover and let it boil then turn the heat to simmering mode and cook for 20 minutes. Add in the fried chicken meat and cubed potatoes Cover and simmer for another 20 minutes. Stir from time time. Just add 1/2 cup water to 1 cup water little by little or only if you think its necessary. Add the rest of the seasoning : pepper, salt, sugar, chili flakes, paprika and oregano. Simmer for another 10 minutes. Then add cubed red and green bell pepper. Adjust the seasoning accordingly. Cook for another 5 minutes. Serve hot.

CROCK POT CHICKEN (OR BEEF OR PORK) GREEN CHILE STEW ...
I have not made this recipe yet, but it is tried and true by a friend of mine, on another board, Marsha Tbay, a very reliable source. What I like about this recipe is that it is so versatile, you can use chicken, beef or pork to vary it. Personally, I would brown the meat first in a little oil then continue with the recipe. The 8-10 hours is the time it is cooking in the crock pot.
