Vegetable or peanut oil
1 cup flour
2 1/2 tbsp. powdered sugar
1/2 tsp. pepper
1 tbsp. salt
1 egg
1 cup milk
Chicken tenderloins
Mixed salad greens
Corn, sauteed or roasted
Cheddar jack cheese
Bacon bits
Hard-boiled eggs, chopped
Grape tomatoes
Crispy freeze-dried peppers
Dressing of your choice

Steps:

  • For the chicken: In a bowl, mix together flour, powdered sugar, pepper, and salt.
  • In another bowl, beat egg with milk.
  • Dip chicken into egg, then flour.
  • Fry in preheated 350 degree oil until golden brown. Drain on a paper towel lined plate.
  • Slice chicken into bite-size pieces.
  • Assemble the salad by topping mixed greens with corn, cheese, bacon, eggs, tomatoes, peppers, and chicken. Drizzle with dressing of your choice.
