Steps:
- 1 Heat a pot over medium heat.
- 2 Put the lard in the pot and heat until it is very hot.
- 3 Put the pork skin in the pot. It is important to move the skin frequently to avoid it from sticking to the bottom of the pot.
- 4 Cook the skin for about 1 hour until it looks smooth. Season with salt to taste.
- 5 Cook and move the skin constantly for another hour until it gets browned.
- 6 Check one chicharron by taking it out and letting it cool to see if it has the consistency you want.
- 7 If it's crunchy, but it's not hard, then it's ready.

Steps:
- Cut Pork Belly (2 pound) into 2-inch wide strips. Make deep cuts into the pork skin and belly, but don't cut all the way through.
- Place pork in a bowl of water just to cover the pork. Salt (to taste) water heavily and soak 1-2 hours.
- Place pork in new boiling water just to cover pork. Cook until all water is absorbed. Oil should be left behind.
- Fry pork in its own oil, if enough oil has not been left in pan then add more. Season with Salt (to taste) or any Dry Mixed Spice (to taste) you want. Then flip and fry other side.
- Cool a bit and serve.

- Discard marinade and place pork (slowly, one by one) into hot pan with tongs not fork. Cover with foil/lid and fry for about 15 minute Remove foil/lid and let fry for another 5 mins uncovered. Turn pork pieces and fry evenly on other sides (about 5-7 mins more). Finally, with tongs, stir pork around (turning frequently) in the hot pan for about 2 more mins or until you see a nice dark golden caramalized color on pork. Remove from pan with tongs and drain on paper towel. Serve warm.
