This cheesecake is light and airy, perfect for a hot summer day.

1 1/2 cups graham cracker crumbs
¼ cup Vermont Creamery Unsalted Cultured Butter - 82% Butterfat melted
8 ounces cream cheese, room temperature
1 (4-ounce) Vermont Creamery Classic Goat Cheese room temperature
3/4 cup powdered sugar
1 cup heavy cream
1/2 teaspoon freshly grated orange zest
1 teaspoon vanilla extract
Fresh berries
Coconut flakes

Steps:

  • Combine graham cracker crumbs and melted butter in small bowl; mix well. Press into bottom of 8-inch springform pan; set aside.
  • Beat heavy cream in bowl until stiff peaks form; set aside.
  • Beat softened cream cheese, fresh goat cheese, and orange zest in another bowl until smooth. Add powdered sugar and vanilla; beat at low speed until well mixed.  Fold in half of whipped cream until incorporated. Add remaining half and fold in until smooth.
  • Gently spoon mixture onto pressed graham cracker crust, spreading to form an even layer. Cover with plastic food wrap; refrigerate 4-5 hours or overnight.
  • To serve, top with fresh berries and coconut flakes.

  • Heat the oven to 350°F. Toss the granola, cookie crumbs, brown sugar, and 1/4 teaspoon each cinnamon, ginger, nutmeg, and salt together in a medium bowl. Stir in the butter and pat the mixture into the bottom of a 9-inch springform pan. Bake for 15 minutes. Cool on a wire rack. Meanwhile, in a large bowl and using an electric mixer on low, beat together goat cheese and sugar. Add in cream cheese and beat for 1 minute. Add remaining ingredients and 1/4 teaspoon salt; beat until mixture is very smooth, about 20 more minutes. Transfer batter to prepared pan. Bake on a rack positioned in middle of oven until set, about 1 hour, 15 minutes. Transfer to a wire rack to cool completely. Cover with plastic wrap and refrigerate until completely set, 4 to 5 hours or up to 3 days. Serve with whipped cream.
