We always called it the "Busy Cake"...too many things going on with it! Crushed maraschino cherries can be found in the ice cream sundae department at the grocery store. If you can't find them, get regular maraschino cherries and chop.

Yield 1 - 9x13 inch pan

Number Of Ingredients 18

2 cups all-purpose flour
2 cups white sugar
¾ cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
2 eggs
1 cup strong brewed coffee
1 cup milk
½ cup vegetable oil
2 teaspoons vanilla extract
1 (10 ounce) jar maraschino cherries, drained
2 cups miniature semisweet chocolate chips
½ cup butter, softened
4 cups confectioners' sugar
½ teaspoon salt
2 tablespoons vanilla extract
4 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • In a large bowl, mix flour, sugar, cocoa, baking powder, soda and salt.
  • Add eggs, coffee, milk, oil and vanilla. Beat until smooth (batter will be thin).
  • Fold in cherries and chocolate chips. Pour batter into 9x13 inch pan.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes or until toothpick inserted into middle comes out clean. It's best to leave it in the pan, because the chips and the cherries sort of sink to the bottom and solidify and will stick big time! Frost with white buttercream.
  • For the frosting: In a large bowl, combine butter, confectioners sugar, 1/2 teaspoon salt and vanilla. Cream with an electric mixer. Add milk by the tablespoon until frosting is smooth.

Number Of Ingredients 14

1/2 cup plus 1 tablespoon butter, softened
1/2 cup sugar
1/4 cup packed dark brown sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1 teaspoon maple flavoring
1-1/2 cups all-purpose flour
5 teaspoons baking cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup semisweet chocolate chips
1 cup white baking chips
1/2 cup dried cherries or dried cranberries
1/4 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. Cream butter, gradually adding sugars, until light and fluffy. Slowly beat in egg, vanilla and maple flavoring., In another bowl, sift together flour, baking cocoa, baking soda and salt. Gradually beat into creamed mixture just until moistened (do not overbeat). Stir in semisweet chocolate and white baking chips, dried cherries and coconut., Drop dough by tablespoonfuls 2 in. apart onto ungreased baking sheets. Flatten slightly. Bake until golden brown, 10-12 minutes. Cool on pans 5 minutes. Remove to wire racks to cool completely.

The first time I fell in love, it was with cookies. My admirer made me homemade Chocolate Chip Cherry Cookies and gave them to me at my work. I was a very chatty twenty-year-old barista who was left speechless. They were delicious and I made him a thank-you card. When he did, he sat down, we talked, and from that moment I was so in love I couldn't breathe. I was young and happy, and as the years moved forward I just knew we would grow old together. And then we didn't. He decided he wanted to be old with someone else. The heartbreak that accompanies the loss of first love is utterly devastating and hurts in a bright, raw, searing sort of way. This is my version of a recipe originally found in an old issue of Taste of Home magazine. I make this each year and it is always a hit. My family likes this particular version because only contains fruit & nuts they like(cherries, dates or raisins and pecans)plus chocolate chips - no tangy sour bits of rind and also no alcohol so children can enjoy this as well. You also don't need to make this too far in advance as it requires no aging - I make this the day before Christmas Eve and serve it as part of our holiday meal. You can substitute any finely chopped nut you prefer for the pecans if they are not available in your area. They should be chopped finely, but still have some texture - do not use ground nuts. Prep time assumes you have already shelled and chopped your nuts. Cook time is 1 1/4-1 1/2 hours.
