A delicious Szechwan chicken stir with very complex flavors. A little difficult to make but worth the effort.

1/2 lb boneless skinless chicken breast, cubed
1 tablespoon cornstarch
1 1/2 tablespoons dry sherry
1 1/2 tablespoons dark soy sauce
1/2 cup sliced bamboo shoots or 1/2 cup celery
1 small tomatoes, cut in wedges
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
2 scallions, cut 1 inch
1 tablespoon szechuan hot bean sauce (Available in Chinese groceries no substitute)
1 1/2 tablespoons dark soy sauce
1 teaspoon vinegar (white or cider)
1/2 cup chicken stock
1 teaspoon sugar (or less, to taste)
1 tablespoon ketchup (opt but very good) or 1 tablespoon Worcestershire sauce (opt but very good)
1 teaspoon Chinese chili sauce (opt, if you like it very hot)
vegetable oil
cornstarch, mixed in
water
3 -5 drops sesame oil
1/2 teaspoon ground roast szechuan peppercorns

Steps:

  • Szechuan peppercorns are available in Chinese groceries.
  • To use, put a teaspoon or two of them in a dry skillet (no oil!).
  • Toast over medium heat until they start to smoke.
  • It takes less than a minute or two.
  • Crush them with a rolling pin or in a mortar and pestle.
  • Strain the crushed peppercorns through a little mesh strainer, discard the hulls.
  • Heat wok until smoking hot.
  • Pour in 3- 4 T oil; stir fry chicken until just cooked.
  • Remove to a colander and let excess oil drain into a bowl.
  • Reheat wok; stir in seasonings.
  • As soon as you get a strong smell from the garlic, add the bamboo (or celery), stirring until heated through.
  • Stir in the sauce until it bubbles.
  • Thicken slightly with a little of the cornstarch mixture.
  • Return the chicken along with the tomato, stirring until very hot.
  • Stir in a few drops of sesame oil.
  • Sprinkle Szechwan peppercorn powder over.
  • Remove immediately to a heated serving platter.

1 ts Vinegar
1 tb Chinese cooking wine
1 ts Salt
1 1/2 tb Soy sauce
1 tb Ginger; finely chopped
1 tb Garlic; finely chopped
1/4 c Green onion; chopped
1 tb Cornstarch
1 ts Cornstarch
1 tb Hot bean paste
1 ts Sugar
1 ts Szechuan pepper
2 tb Water (cold)
1 lb Chicken breast; in bite
1 c Tomatoes; in pieces
2 ts Sesame oil
1 c Bamboo shoots; in bite size
1 tb Soy sauce
Peanut oil for stir frying

Steps:

  • "1. Mix soy sauce, chinese cooking wine and corn starch, add chicken and mix to coat. Marinate for 15 minutes. 2. Heat wok. Add 2 peanut oil, garlic and ginger. Stir fry 1 minute. 3. Add chicken. Stir fry 2 minutes until chicken changes color. Remove. 4. Reheat wok. Add 1 tbsp peanut oil, bamboo shoots, white portion of green onions and tomatoes. Stir fry 2 minutes to heat through. 5. Add chicken and stir fry 1 minute. 6. Add hot bean paste, soy sauce, vinegar, suagr, sesame oil, szechuan pepper and salt. 7. Serve garnished with green onions. Of all Chinese dumplings, wontons are the simplest to make, if you buy ready-made wrappers. They cook in minutes and have a delightfully slippery mouthfeel. In Sichuan, the source of this recipe, they are known as "folded arms" (_chao shou_). Some say this is because the raw dumplings look like the folded arms of a person sitting back in relaxation; others that it's because of the way they are wrapped, with one corner crossed over the other and the two pinched together. The basic wontons can be served in a host of different ways and this Chengdu version is one of my favorites, with its sumptuous, heart-warming sauce. Wonton skins can be bought fresh or frozen in most Chinese food shops; they should be very thin and supple. If you want to take the easiest option in wrapping the dumplings, you can simply fold them in half, on the diagonal, to make a triangle. Otherwise, wrap into classic ["water caltrop"](/recipes/food/views/51147800) shape, as professional cooks and market vendors do across China. (The water caltrop is an exotic-looking aquatic nut with a pair of horns.) This recipe makes 15-20, enough for four as an appetizer, or two for lunch. If you use fresh ingredients and make more than you need, the surplus can be frozen and cooked straight from the freezer.

  • When the water has come to a boil, drop in the wontons. Stir gently to make sure they do not stick together. When the water returns to a rolling boil, pour in a small cup of cold water to calm it down. Repeat this one more time. When the water has come to a boil for the third time, the wontons should be cooked through (cut one open to make sure). Remove the wontons with a slotted spoon, drain well, and divide between the prepared serving bowls. Scatter each bowl with some of the spring onion greens. Serve immediately, stirring everything together before digging in.
