Cheesy Zucchini Tots Recipe | EatingWell image

Not one, not two, but three cheeses make these low-carb cheesy zucchini tots live up to their name. Bake them in the oven or fry them in your air fryer for a crisp exterior and a gooey, melted center. Don't use pre-shredded cheese here; shred it fresh for the best and creamiest results. Serve with ketchup, marinara, ranch or your favorite dipping sauce.

1 medium-large zucchini (about 12 ounces)
1 ounce provolone cheese (about 1/3 cup shredded)
1 ounce fontina cheese (about 1/3 cup shredded)
1 ounce Parmesan cheese (about 1/4 cup grated)
½ cup panko breadcrumbs (regular or gluten-free)
2 tablespoons all-purpose flour or gluten-free flour blend
½ teaspoon ground pepper
½ teaspoon dried oregano
1 large egg, beaten
Cooking spray

Steps:

  • Preheat oven or air fryer to 400°F. If baking, line a large rimmed baking sheet with parchment paper or a silicone liner.
  • Shred zucchini on the coarse side of a box grater. Place the shredded zucchini in a clean cotton towel (not terry cloth) and squeeze tightly to release excess liquid. Place in a large bowl. Shred provolone and fontina into the bowl, then grate Parmesan into the bowl. Add panko, flour, pepper and oregano; stir to combine. Add egg and stir to coat well.
  • Using your hands, lightly squeeze generous 1 1/2-tablespoon portions of the zucchini mixture to create 1-by-1 1/2-inch tots. You should have 28 tots.
  • If baking, place on the prepared baking sheet and lightly coat with cooking spray. Bake until lightly browned and crispy on top, about 20 minutes. If air-frying, coat the air-fryer basket and the tops of the tots with cooking spray. Air-fry until lightly browned and crispy on top, about 6 minutes.
  • Let the tots rest for 4 minutes before serving with your favorite sauce.

I created this recipe over time in homage to the original from Opie's BBQ in Spicewood, TX. Some things to note: Ore-Ida tater tots have lots of salt and seasoning; typically off-brand do not. I would probably add over a tsp for off-brand tots.

1 (2 lb) bag ore-ida frozen tater tots
2 (10 3/4 ounce) cans reduced-fat cream of chicken soup
1 (8 ounce) low-fat sour cream
1 (16 ounce) package low-fat cheddar cheese, shredded
1 (8 ounce) package colby cheese, shredded
1 teaspoon black pepper
1 (6 ounce) container French-fried onions

Steps:

  • Mix everything but the Colby cheese and french's onions in a large bowl (make sure tots are still frozen so they don't break apart).
  • Scoop mixture into one 9x13 pan.
  • Bake uncovered at 350 degrees for one hour.
  • Top with Colby cheese and then French's onions and bake for another 5-10 minutes until onions are golden brown.

  • Preheat the oven to 375 degrees. Remove the tater tots from the freezer to let them thaw slightly while you prepare the filling. Heat a large skillet over medium heat. Add the bacon and cook until golden brown and extra crispy, 6-8 minutes. Remove to a paper towel lined plate and leave the grease in the skillet. Set all of the bacon aside for topping later.  Add the onion to the skillet and cook until slightly softened, about 4 minutes. Add the garlic and cook 1 more minute. Add the ground beef and break into small pieces with a wooden spoon. Cook the meat until no pink pieces remain, 6-8 minutes. Drain off excess fat or liquid, if you like. Remove skillet from the heat. Stir in the soup, milk, salt and ½ teaspoon black pepper and mix until smooth. Fold in the spinach to wilt slightly, then the corn. Sprinkle the cheddar cheese evenly over the top of the casserole. Place the tater tots on top in a single layer, arranging them in concentric circles (or just toss them on and push them very close together.) Sprinkle the top with parmesan cheese and the additional 1/4 teaspoon of black pepper.  Bake 30-35 minutes until the tater tots are golden. Remove from the oven and crumble the cooked bacon over top. Let rest 5 minutes. Top with chopped chives or scallions and serve.
