low-sodium chicken broth

3/4 c.

heavy cream

shredded mozzarella, divided

1/2 c.

shredded Parmesan, divided

1/3 c.

shredded Asiago 

1/3 c.

shredded provolone

(17.5-oz.) packages gnocchi

2 tbsp.

fresh basil, chopped

Steps:

  • Preheat oven to 375º and grease a 9"-x-13" baking dish with butter. In a large pot over medium heat, melt butter. Add garlic and cook until fragrant, about 1 minute. Whisk in flour, 1 tablespoon at a time, stirring constantly, about 1 minute. Whisk in broth and heavy cream and season with salt and pepper. Bring mixture to a simmer, then reduce heat to low and quickly whisk in ? cup each cheese until melty and smooth. Remove from heat.  Add gnocchi to prepared baking dish. Pour in cheese sauce and stir until pasta is evenly coated. Top with remaining mozzarella and Parmesan, and season with a few grinds of pepper.  Bake until cheese is bubbly and golden, 25 to 30 minutes.  Garnish with basil before serving.

2 teaspoons extra-virgin olive oil
1 (16-ounce) package prepared whole-wheat gnocchi
4 ounces mild Italian sausage, casings removed
1?½ cups chopped tomato
2 garlic cloves, sliced
¼ cup unsalted chicken stock (such as Swanson)
2 ounces part-skim mozzarella cheese, shredded (about 1/2 cup)
¼ cup chopped fresh basil

Steps:

  • Preheat broiler to high.
  • Heat a large ovenproof skillet over medium heat. Add oil; swirl. Add gnocchi; cook 7 minutes or until lightly browned, stirring occasionally. Place gnocchi in a large bowl. Add sausage to pan; cook 6 minutes or until browned, stirring to crumble. Add sausage to gnocchi. Add tomato and garlic to pan; cook 2 minutes, stirring occasionally. Add gnocchi mixture and stock to pan; sprinkle with cheese. Place pan in oven; broil 2 minutes or until cheese is melted and lightly browned. Sprinkle with basil.
