Double Layer Pumpkin Cheesecake Recipe | Allrecipes image

A great alternative to pumpkin pie, especially for those cheesecake fans out there. Serve topped with whipped cream.

Number Of Ingredients 10

2 (8 ounce) packages cream cheese, softened
½ cup white sugar
½ teaspoon vanilla extract
2 eggs
1 (9 inch) prepared graham cracker crust
½ cup pumpkin puree
½ teaspoon ground cinnamon
1 pinch ground cloves
1 pinch ground nutmeg
½ cup frozen whipped topping, thawed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a large bowl, combine cream cheese, sugar and vanilla. Beat until smooth. Blend in eggs one at a time. Remove 1 cup of batter and spread into bottom of crust; set aside.
  • Add pumpkin, cinnamon, cloves and nutmeg to the remaining batter and stir gently until well blended. Carefully spread over the batter in the crust.
  • Bake in preheated oven for 35 to 40 minutes, or until center is almost set. Allow to cool, then refrigerate for 3 hours or overnight. Cover with whipped topping before serving.

1¼ cup graham cracker crumbs
3 tbsp sugar
4 tbsp melted butter
8 oz cream cheese at room temperature
16 oz full-fat Greek yogurt
1 cup of sugar
4 large eggs
1 tbsp vanilla extract
Pinch of salt

Steps:

  • To begin, preheat your oven to 350 degrees Fahrenheit.
  • In a mixing bowl, add the graham cracker crumbs, sugar and melted butter. Combine the ingredients fully together and then press into a cheesecake tin.
  • Bake for 10-12 minutes. Wait for the cheesecake base to cool completely before moving onto the next step.
  • In another bowl, blend together the cream cheese, eggs, greek yogurt, sugar, vanilla extract and salt. You should keep mixing until you get a smooth consistency.
  • Spread the cheesecake filling onto the top of your base.
  • Place the cheesecake back into the oven for 50 minutes. It will have some bounce to it when you remove from the oven and that is perfect.
  • Allow the cheesecake to fully cool before serving.
