The Cheesecake Factory has more than 30 cheesecake flavors, but it's the original that makes us swoon. Try this copycat version, from the book Top Secret Restaurant Recipes 2.

Crust:
1?½ cups graham cracker crumbs
¼ teaspoon ground cinnamon
? cup unsalted butter or margarine, melted
FILLING:
4 (8 oz.) packages cream cheese, softened
1?¼ cups sugar
½ cup sour cream
2 teaspoons vanilla extract
5 large eggs
TOPPING:
½ cup sour cream
2 teaspoons sugar

Steps:

  • Preheat oven to 475°F. Place a large pan filled with 1/2 inch water in oven.
  • Make crust: Mix graham cracker crumbs and cinnamon; add butter or margarine. Press crust onto bottom and 2/3 of the way up a 9-inch springform pan lined with parchment. Wrap a large piece of foil around bottom of pan. Freeze until filling is prepared.
  • Make filling: Use an electric mixer to mix cream cheese, sugar, sour cream and vanilla. Blend until smooth and creamy. Scrape down sides of bowl. Whisk eggs in a bowl; add to cream cheese mixture. Blend just until eggs are incorporated.
  • Remove crust from freezer and pour in filling. Carefully place cheesecake into preheated water bath. Bake for 12 minutes; turn oven to 350°F and bake until top of cheesecake turns golden, 50 to 60 minutes. Remove cake to a wire rack to cool.
  • Make topping: Combine sour cream and sugar; spread over cake. Cover and refrigerate at least 4 hours.

Here's what you need: birthday cake mix, cream cheese, sugar, vanilla extract, milk, gelatin powder, whipped cream, sprinkles

1 box birthday cake mix, with additional ingredients according to box instructions
32 oz cream cheese, softened
1 cup sugar
1 tablespoon vanilla extract
1 cup milk
1 tablespoon gelatin powder
whipped cream, to taste
sprinkles, to taste

Steps:

  • Preheat oven to 350°F (180°C).
  • Prepare cake mix according to the box directions and pour batter into a greased springform pan.
  • Bake for 35 minutes, or until a toothpick will comes out dry when inserted.
  • In a large mixing bowl, add the softened cream cheese, sugar, and vanilla, and mix until combined.
  • Microwave the milk for 90 seconds, then whisk in the gelatin powder.
  • Pour the gelatin mixture into the cream cheese mixture and whisk until combined.
  • Pour the cheesecake mixture over the cooled birthday cake and chill in the refrigerator for at least 3 hours.
  • Pipe whipped cream along the edge of the cake, then follow with sprinkles all over the top.
  • Enjoy!

  • Preheat oven to 350° and grease a 9” springform pan with cooking spray. Prepare Funfetti cake mix according to package instructions and pour about half of the batter into prepared pan. Bake until a toothpick inserted into the middle of the cake comes out clean, 23 to 25 minutes. Let cake cool for 10 minutes. Make cheesecake mixture: In a large bowl using a hand mixer, beat cream cheese and sugar until combined. Add eggs and beat until combined, then stir in sour cream and vanilla and fold in sprinkles. Pour cream cheese batter onto cooled cake and bake until cheesecake is slightly jiggly in the center, 1 hour to 1 hour 10 minutes. (Cheesecakes tend to crack if you don't use a water bath. If you don't want to use one, bake as directed. If you do want to use a water bath, double wrap the outside of the pan in aluminum foil and place in a baking dish. Place on oven rack and pour in enough boiling water to reach halfway up the pan. Bake as directed.) If not using a water bath: Remove pan from oven and run a knife around the inside of the pan to release the cheesecake. Let cool 1 hour on a wire rack, then refrigerate until totally chilled, at least 4 hours and up to overnight. Pipe vanilla frosting along border of the cheesecake then garnish with more sprinkles. Slice and serve cold.
