This is as quick and easy as cheesecake recipes get, using cookies and graham crackers for a crust in a no-bake cheesecake.

Steps:
- In a bowl, mix together crushed cookies and graham crackers with melted butter and the 3 tablespoons sugar.
- Press into a 7 inch springform pan. Place in refrigerator until ready for use.
- In another bowl, beat cream cheese, 1/3 cup of sugar and lemon juice.
- Whip cream, and fold into cream cheese mixture.
- Spread into pan.
- Top with sliced strawberries (optional). Freeze for 1 hour, covered with foil.
- Place in refrigerator 30 minutes before serving.

Steps:
- In a glass bowl melt the butter.
- To the butter add all remaining base ingredients.
- Mix well to distribute all ingredients evenly.
- Line a cheesecake pan with parchment paper and add the crust mixture in.
- Flatten the crust so it evenly covers the bottom and edges. Allow to chill while making the filling.
- In another bowl cream together the filling ingredients until thick and smooth. Scoop the filling into the base and set in the fridge for at least 5 hours. Or the freezer for 2-3.
- Slice and serve, you may need to allow it to soften if coming from the freezer.

- Line a 12-cup muffin tin with paper liners. Place 1 Oreo in each of the liners. Place the remaining 12 Oreos in a large ziptop bag and crush with a rolling pin. In the bowl of stand mixer fitted with a paddle attachment, beat the cream cheese on medium until smooth, about 2 minutes. Add the sugar, sour cream, vanilla and salt. Beat until smooth and creamy, about 2 more minutes. In a medium bowl, whisk the heavy cream until stiff peaks form. Add the whipped cream to the cream cheese mixture and fold just until combined. Add 1 cup of the crushed Oreos and fold until combined. Spoon the cream cheese mixture into each muffin liner (about 1/4 cup each) and smooth the top. Sprinkle all over with remaining Oreos. Chill the cheesecake bites until firm and set, at least 6 hours or up to 2 days.

- Using a round biscuit cutter, punch holes out of cheesecake. (Depending on size of cheesecake you should be able to get 8 to 12 cheesecake bites.) - Preheat oven to 350º and line a muffin pan with cupcake liners. Prepare red velvet cake batter according to box directions. Divide batter among liners and bake until a toothpick inserted in the center comes out clean, 18 to 20 minutes. Let cool completely. Break 4 cupcakes into small crumbs. Save remaining cakes for another use. In a large bowl using a hand mixer, beat cream cheese and powdered sugar until light and fluffy. Add heavy cream and vanilla and beat until stiff peaks form. Line a large baking sheet with parchment. Using a small cookie scoop, scoop cream cheese mixture into balls and place on prepared baking sheet. Transfer to the freezer to chill, 1 hour. Roll balls in red velvet cake crumbs until fully coated, then return to prepared baking sheet. Refrigerate until ready to serve.
