KALAMATA CHEESECAKE APPETIZER RECIPE: HOW TO MAKE IT
It's believed the Greeks served cheesecake at the first Olympics, so why not rewrite history with a Greek cheesecake appetizer? Ingredients in this version "tame" the kalamata olives, so even if you shy away from kalamatas, you'll be glad you tried this one. - In a small bowl, combine bread crumbs and pecans; stir in butter. Press onto the bottom of a greased 9-in. springform pan. Place pan on a baking sheet. Bake at 350° for 12 minutes. Cool on a wire rack., In a large bowl, beat the cream cheese, sour cream, flour, salt and pepper until smooth. Add egg and egg yolk; beat on low speed just until combined. Fold in chopped olives and minced rosemary. Pour over crust. Return pan to baking sheet., Bake for 25-30 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Loosen edges of cheesecake from pan with a knife. Cool 1 hour longer. Refrigerate overnight., Remove rim from pan. If desired, top cheesecake with halved olives and rosemary sprigs.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium-low heat, warm oil and saute onions and garlic until onions are translucent; set aside to cool. When cool, pour off liquid reserving garlic.
- Cut shrimp into 1/2 inch pieces, reserving 12 uncut for garnish. In a large skillet over medium-low heat, melt butter and add reserved garlic and all shrimp; cook shrimp for 2 to 4 minutes or until done.
- Remove center circle and a small portion of inside of cooled puff pastry shells.
- In a medium bowl, beat cream cheese until creamy; add one egg at a time and beat until well mixed. Add cream, Gouda, onions, shrimp and salt.
- Spoon filling into puff pastry shells.
- Bake in preheated oven for 20 to 25 minutes or until filling is browned on top. Garnish with whole shrimp and chopped chives; serve.

In large bowl, combine cream cheese and taco seasoning mix. Beat at medium speed, scraping bowl often, until well mixed, about 1-2 minutes. Add eggs. Continue to beat until smooth. Stir in cheese and salsa. Carefully spoon cream cheese mixture over crust spreading to smooth. Bake at 325 degrees for 30-35 minutes or until edges are set (center of cheesecake will be slightly soft). Top with sour cream. Cool completely. Cover; refrigerate until serving time (overnight is ideal). Just before serving, remove sides of springform pan; garnish with green onions, ripe olives and tomatoes. Serve with tortilla chips.
