1 teaspoon dried parsley flakes
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon garlic powder
4 boneless chicken breasts, pounded to 1/4-inch thickness and frozen for 15-20 minutes for ease in handling
4 slices swiss cheese
1/4 cup all-purpose flour
1/2 cup seasoned dry bread crumb
2 tablespoons grated parmesan cheese
1/8 teaspoon salt
1/8 teaspoon pepper
2 eggs, slightly beaten
crisco nonstick cooking spray

Steps:

  • Preheat oven to 375ºF.
  • In small mixing bowl combine green onion, parsley flakes, salt, pepper and garlic powder.
  • Set aside.
  • Place one piece of cheese in center of each chicken breast.
  • Top with one-fourth of onion mixture. Starting at narrow edge, roll each breast tightly, tucking in sides to enclose cheese and onion mixture.
  • Dredge with flour.
  • In small bowl combine breadcrumbs, Parmesan cheese, salt and pepper.
  • Dip each rolled breast in beaten egg, then in crumb mixture to coat.
  • Spray a 9 x 9 x 2-inch pan with Crisco No Stick Cooking Spray.
  • Generously spray each of coated breasts with Crisco No Stick Cooking Spray and arrange in pan.
  • Bake for 30 to 35 minutes, or until golden brown.

4 (4-ounce) boneless skinless chicken breasts
2 ounces Cheddar cheese, cut into 4 (2x1/2x1/2-inch) strips
1/2 cup cornflake crumbs
1/4 cup shredded Cheddar cheese
1 teaspoon seasoning salt *
1 large Land O Lakes® Egg beaten

Steps:

  • Heat oven to 400°F. Cut a 3-inch slit in each chicken breast half to form pocket. Insert 1 strip cheese into each pocket. Secure each pocket with several toothpicks.
  • Combine crumbs, shredded cheese and seasoning salt in pie pan or shallow bowl. Place beaten egg in another pie pan or shallow bowl; dip chicken in egg. Lightly press both sides of chicken in crumb mixture to coat.
  • Place chicken onto greased baking sheet. Bake 20-25 minutes or until chicken is no longer pink.

Yet another recipe from the local paper that I want to try ... some day. I did try this recently and we all really liked it. Next time I think I'll place a small amount of blue cheese on top of the chicken when it comes out of the oven and is served. The cheese/butter mixture melts during cooking and even though the flavor is wonderful, everyone said more cheese on top would be nice. Also, I think the little bit of sauce that there is, would be nice thickened and spooned over the chicken too. Let me know what you think.
