Enjoy a cheesy snack with this antipasto cheese ball that is filled with antipasto ingredients on the inside and coated with cheese for a satisfying snack.

For The Dip:
24 oz cream cheese
½ cup chopped sun-dried tomatoes
½ cup capsicum, diced red bell peppers
3 oz chopped salami
¼ cup chopped chives
¼ cup chopped parsley
1 tbsp onion powder
2 tbsp garlic powder
to taste, if desired salt
For The Decorations:
2 cups halved lengthways, use a variety of black, green, and Kalamata olive dried with paper towel pitted mixed olives
½ cup chopped, dried with paper towel sun-dried tomatoes
water crackers or pretzels for serving Ritz
for serving Salami slices
for serving Prosciutto slices

Steps:

  • In a bowl, combine all the ingredients for the dip and mix until the ingredients are well combined.
  • Place a piece of non-stick plastic wrap on a clean benchtop or work surface. Scoop the cream cheese mixture out onto the plastic wrap and completely cover with another piece of wrap.
  • Use your hands to mold the cream cheese mixture into a ball.
  • Carefully pick up the cheese ball with one hand and peel off the plastic wrap on the bottom of the ball with your other hand. Place the ball straight onto a serving plate.
  • To decorate:
  • Dry each olive and sun-dried tomato piece on a sheet of paper towel to soak up the oil before placing them on the cheese ball so they adhere better.
  • Lightly press them into the cream cheese to ensure they stay on. Brush with some sun-dried tomato oil from the jar.
  • Serve with crackers of your choice, salami, and prosciutto slices rolled up.

8 slices Italian or sourdough bread
8 slices provolone cheese
1 (12-ounce) jar roasted red peppers, cut into strips, drained well
8 slices deli-style Genoa salami
1/4 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 cup olive oil

Steps:

  • Place 4 bread slices on work surface. Evenly layer each slice with provolone cheese, red pepper strips, and salami. Sprinkle with garlic powder and oregano. Place remaining bread on top and brush both sides of sandwiches with olive oil.
  • In a large skillet or a griddle over medium heat, cook sandwiches in batches until golden on both sides and cheese is melted.
