CREAM CHEESE CAKE MIX COOKIES | JUST A PINCH RECIPES
Deliciously sweet, these cookies are fantastic! The cream cheese gives them a soft and gooey taste. Their texture is cake-like. If you like a thinner crispy cookie, these are not that. Sort of like a soft-batch cookie you get from the store. We made these two ways. For one, we used a butter cake mix and added chocolate chips. The other we used a red velvet cake mix and mixed in white chocolate chips and nuts. Get creative with your favorite combination.

Steps:
- Preheat oven to 375 degrees. Cream together butter and cream cheese. (I used a mixer for this part only.)
- Add egg and vanilla; mix until well blended.
- Stir in cake mix a little at a time.
- Continue until it's all blended.
- Then add any chips, candy, or nuts, as you like.
- Spoon onto cookie sheer and bake for 10 minutes, until edges are brown.

A great cookie option if you don't like heavy frosting on your cutout cookies since you can decorate how you want. We used this Easy Homemade Buttercream Recipe for decorating and thinned it a little with milk for our reindeer and Christmas tree decorations.

Steps:
- In a large bowl, combine sugar, butter, cream cheese, salt, extracts, and egg yolk.
- Blend well.
- Lightly spoon flour into measuring cup, and level off to measure.
- Stir in flour until blended.
- Cover with plastic wrap and shape into a disk. Refrigerate for about 2 hours or overnight.
- Heat oven to 350. On a lightly floured board, roll out dough, 1/3 at a time, to 1/8 inch thickness. (Keep remaining dough refrigerated).
- Cut into desired shapes with floured cutters. Place 1 inch apart on cookie sheets lined with parchment paper. Leave cookies plain or sprinkle with sugar crystals at this point. Bake for 7- 10 minutes or until a light golden brown.
- Immediately remove from sheets and cool on wire racks.
- Cool completely. Frost and decorate as desired. Enjoy!

- This works great as a stand-alone recipe, but also as a component in Jamie’s Sunny Gathering from Together – see the full collection of menus here. GET AHEAD Finely grate all of the cheese. Place the butter in a medium pan on a medium heat with 250ml of cold water. As soon as the mixture comes to a rolling boil, tip in the flour, semolina and a pinch of sea salt. With a wooden spoon, work carefully, quickly and fairly vigorously to beat it all together until smooth and starting to come away from the sides of the pan. Remove from the heat and beat for 30 seconds, then, one at a time, beat in the eggs, followed by the grated cheese. Cover and refrigerate for at least 2 hours. Line a baking sheet with greaseproof paper. With wet hands, divide the mixture into 24 pieces and roll into glorious, shiny balls, lining them up on the tray as you go. Cover and return to the fridge overnight. TO SERVE Preheat the oven to 200°C/400°F/gas 6. Bake uncovered for 20 minutes, or until golden. Enjoy warm with a glass of something cold and sparkling.

- When the cookies are cool, dip the entire surface of the top of each cookie in the glaze and lift up, letting the excess glaze drip off, then flip the cookie right-side up and onto the cooling rack. If the glaze is too thick, add another teaspoon of milk to loosen it. If using the cranberries or lime zest, sprinkle on top of the cookies while the glaze is still wet. Allow the glaze to set before serving, at least 10 minutes. Store the cookies in a single layer in an airtight container for up to 5 days.
