Ridiculously addictive appetizers. I brought them to a party and everyone attacked them like starving piranha on a cow. I included them in a tin of cookies for my hubby's co-workers and one of them ate all of them before anyone else could try them. She also demanded the recipe. From the cookbook "Fix, Freeze, Feast" by Katie Neville and Lindsey Tkacsik. Make them ahead of time, keep in your freezer and bake what you need. I plan to have these on hand all the time.

Yield 8 dozen, 16 serving(s)

Number Of Ingredients 7

2 lbs sharp cheddar cheese, shredded
2 cups unsalted butter, softened
5 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 (8 ounce) jar small pimento-stuffed green olives, well drained (optional)
raw pecan halves (optional)

Steps:

  • Combine cheese, butter, flour, salt, and cayenne in a large bowl: knead into a dough.
  • Roll dough into 1 inch balls and place on an un-greased baking sheet.
  • If using olives, form each ball around 1 olive.
  • If using pecans, press 1 pecan half onto each ball.
  • Can bake them right now (see instructions below) or freeze for later.
  • Place in trays in freezer for 30 minutes.
  • Remove from freezer and place in freezer bags or container.
  • Seal and freeze.
  • Can bake them straight from freezer.
  • Preheat oven to 425°F.
  • Place cheese balls 3 inches apart on an un-greased baking sheet.
  • Bake 15-17 minutes if frozen, 13-15 minutes if thawed.

Number Of Ingredients 12

4 ounces extra-sharp Cheddar cheese, finely shredded (about 1 cup)
¼ cup unsalted butter, softened
¼ cup mayonnaise
1?½ teaspoons cornstarch
1 teaspoon hot sauce (such as Tabasco)
1 teaspoon Worcestershire sauce
½ teaspoon kosher salt
¼ teaspoon dry mustard
¼ teaspoon paprika
3 large egg whites, at room temperature
? teaspoon cream of tartar 
5 (1½-oz.) thick-cut, firm white sandwich bread slices

Steps:

  • Stir together cheese, butter, mayonnaise, cornstarch, hot sauce, Worcestershire, salt, mustard, and paprika in a large bowl until creamy and combined.
  • Beat egg whites and cream of tartar in a medium bowl with an electric mixer on high speed until stiff peaks form (1 minute, 30 seconds, to 2 minutes). Gently fold egg white mixture into cheese mixture in 4 additions, being careful not to overmix to avoid deflating egg whites; mixture should remain light and airy. Refrigerate, uncovered, until ready to use. 
  • Trim crusts from bread slices. Cut slices in half crosswise; cut each half into thirds to make a total of 30 pieces.
  • Spread cheese mixture evenly over tops and sides of bread pieces. Arrange on a baking sheet coated with cooking spray. Chill, uncovered, until firm, 30 minutes to 1 hour. (To store in freezer, freeze on baking sheet until firm, 30 minutes to 1 hour. Then transfer to a heavy-duty ziplock plastic freezer bag, and freeze up to 3 months. Do not thaw before baking.)
  • While bread pieces chill, preheat oven to 375°F. Bake chilled bread pieces until golden brown and slightly puffed, 10 to 12 minutes. Serve warm.

Meanwhile, in a large bowl, stir together cream cheese, cheddar cheese, garlic powder, and paprika and season with salt and pepper. Use a cookie scoop to form mixture into 18 small balls and transfer to a parchment–lined baking sheet. Refrigerate until firm, 1 hour. In a shallow bowl, stir together bacon, chives, and pecans. Roll balls in bacon-chive-pecan mixture, insert a pretzel stick into each, and let come to room temperature 15 minutes before serving. (If not serving right away, loosely cover with plastic wrap and return to fridge.)
