Menu Description: “Grilled chicken breast strips and rotini pasta oven baked in a creamy Alfredo sauce with a layer of melted cheese.” Pizza Hut announced its new pasta dishes in 2008 with an email campaign claiming the company was changing its name to “Pasta Hut.” The date was April 1st, and the blast was an April Fool’s publicity stunt that helped make the chain’s new Tuscani pastas one of the company’s most popular new product launches. Each of the three varieties of pasta are covered with cheese and baked until light brown on top. The Creamy Chicken Alfredo Pasta garnered the most hacking requests here, all pleading to know how to duplicate the delicious alfredo sauce. I burned through several pounds of pasta and many quarts of cream, but finally landed on this top secret formula. Now make this delicious dish in your own kitchen. No foolin'. Fettuccine alfredo is one of life's greatest comfort foods. It's creamy, cheesy, carb-y, and super super flavourful. We especially love this version because the prawn adds lots of extra flavour and some lean protein to boot!

fettuccine

3 tbsp.

butter

prawns, peeled and deveined, tails removed

salt

Freshly ground black pepper

cloves garlic, crushed

2 tbsp.

plain flour

240 mL

double cream

120 mL

whole milk

1

egg yolk

100 g

freshly grated Parmesan, plus more for garnish

1 tbsp.

Chopped parsley, for garnish

Steps:

  • Cook fettuccine according to the instructions on box, reserving a cup of pasta water to thicken the sauce, if needed. In a large pan over medium heat, heat 1 tablespoon butter until melted. Add prawns, season with salt and pepper and cook until pink and completely opaque, 2 to 3 minutes per side. Remove prawns from pan and set aside. Into the pan, add remaining 2 tablespoons butter and garlic. Cook until the garlic becomes fragrant, about 1 minute. Whisk in flour and cook until no longer raw, 2 minutes. Stir in double cream and milk, then whisk in egg yolk.  Bring to a low simmer and whisk in parmesan. When cheese is melted and sauce has thickened slightly, add cooked pasta and prawns, tossing to combine. Season with salt and pepper. Garnish with more parmesan and parsley.

PIZZA HUT PAN PIZZA COPYCAT RECIPE | TOP SECRET RECIPES
The secret to perfect pan pizza is pressing the dough into a well-oiled pan (Pizza Hut uses soybean oil), then the pan is covered and the dough rises in a heated cabinet for 45 to 60 minutes. When the dough is topped, the edge is sprayed with a butter-flavored “food release” and the pie is baked at 500 degrees F until perfectly browned on top. You can use a 9-inch, 12-inch, or 15-inch deep dish pizza pan or cake pan for this recipe, and you’ll want to preheat your oven with a pizza stone in it to simulate the type of oven used at the chain. The hot ceramic surface of the pizza stone will cause the oil in the pan to cook the bottom of the dough so that it’s brown and crispy like an authentic pan pizza crust should be. I tried making the dough with cake flour, all-purpose flour, superfine “00” flour, bread flour and many combinations of these different flours which all contain varying amounts of gluten. I even tried rising the dough slowly in the refrigerator for various lengths of time as long as up to four days. But after a month of testing and about 30 pan pizzas later, I found the best dough to be straight bread flour, and to let the dough rise at room temperature.
