Easy Guacamole Recipe: The Perfect BBQ Side image

This recipe tastes fresh and is easy to put together as the ingredients are easy to get. You'll never buy store bought guac again.

3 Avocados - Ripe (Ripe)
2 Tomatoes
1 bunch Cilantro
1 Onion (White or Red)
3 Jalapeno's
2 Limes
1 tsp Kosher Salt to Taste (To Taste)

Steps:

  • Cut the avocados in half and remove the pit. Dig out the avocado from the skin. Discard the skin.
  • Crush the avocados in a mixing bowl with a fork. Don't overdo it. We want to leave the avocado slightly chunky.
  • Chop the onion and tomatoes into small pieces and add to the mixing bowl.
  • Cut the ends of the jalapeno off and cut the jalapeno in half. Use a spoon to dig out the membrane and seeds from the jalapeno and discard. Chop the remaining jalapeno into small pieces and add to the mixing bowl.
  • Rinse the cilantro with water and remove the stems. Chop the cilantro into fine pieces. Add to mixing bowl.
  • Cut the limes in half and squeeze all the juice into the mixing bowl.
  • I start by adding 1-2 teaspoons of salt and the add more salt to taste.
  • Mix all the ingredients together with a fork. Taste and confirm if it needs more salt or lime.
  • Enjoy. You've just made the best guacamole you'll ever eat.

This smoky, rich guacamole gets its delicious flavor from the charred avocados, tomatoes, onion, and poblano. The fresh ingredients combine to make this one of the tastiest guacamoles you've ever had. Be sure to remove the plum tomatoes from the grill first or they'll be too soft to dice. For more heat, swap in a few grilled jalapeños or serrano peppers for the poblano. Serve the guacamole immediately after preparing it. In addition to serving the guacamole with chips, you can also try it in tacos, on a sandwich, on toast or in a salad. Garnish with cilantro.

2 slice(s), thick Uncooked red onion(s) 1/2 inch thick each
0.5 large Poblano chile seeded
1 pinch(es) Kosher salt
1 pinch(es) Black pepper
2 Tbsp Cilantro chopped, plus more for garnish
0.5 tsp Lime zest finely grated
2 Tbsp Fresh lime juice
0.75 tsp Ground cumin
0.75 tsp Kosher salt

Steps:

  • Off heat, coat grill rack or grill pan with nonstick spray. Preheat gas grill or grill pan to high, or prepare high fire in charcoal grill.
  • Lightly season all vegetables with pinch each of salt and black pepper and transfer to grill. Cook tomatoes and avocados, turning halfway through cooking, for about 3 minutes. Cook onion, turning occasionally, until lightly charred, about 6 minutes. Cook chile, turning halfway through cooking, until browned, 8 to 10 minutes. Let vegetables cool slightly.
  • Into large bowl, scoop avocados and lightly mash. Stir in cilantro, lime zest and juice, cumin, and 3/4 tsp salt. Chop tomatoes, chile, and onion and gently fold into avocados. Garnish with more cilantro.
  • Serving size: ¼ cup guacamole
