1 package Mung Bean Noodles
1 tablespoon Toasted Sesame Oil
2 Onion
1/2 cup Peanut Oil
6 ounce Cooked Ham
1/2 teaspoon Garlic Paste
1/4 teaspoon Fresh Ginger
4 stalk Scallion
6 ounce Char Siu
4 cup Chicken Stock
1/4 cup Hoisin Sauce
1 teaspoon Chili Paste
1 head Napa Cabbage

Steps:

  • Cover Mung Bean Noodles (1 package) with boiling water, let steep for 10 minutes, drain.
  • Add Toasted Sesame Oil (1 tablespoon), coat.
  • Julienne the Onion (2).
  • Stir fry the onions in Peanut Oil (1/2 cup) until golden and crispy. Remove onions with a slotted spoon to absorbent paper.
  • In the remaining oil, stir fry Cooked Ham (6 ounce), Garlic Paste (1/2 teaspoon), Fresh Ginger (1/4 teaspoon), and Scallion (4 stalk). Stir fry until fragrant.
  • Add the Char Siu (6 ounce), Chicken Stock (4 cup), Hoisin Sauce (1/4 cup) and Chili Paste (1 teaspoon). Bring to a simmer for 2 minutes.
  • Cut Napa Cabbage (1 head) into 2 inch pieces.
  • Add napa cabbage , remove from heat, check/adjust seasoning.
  • Add half the noodles to a soup bowl, add half the soup, top with half the onions. Serve and enjoy!

Char siu Noodles

2 serving noodles (, recommend egg noodle, instant noodle or )
green vegetables as needed (, choy sum, Chinese broccoli or broccoli.)
200 g pork butt
3 tbsp. char siu sauce
1 tbsp. light soy sauce
2 garlic cloves
1 thumb ginger
1 tsp. honey
1/2 tsp. sesame oil
1 tbsp. char siu sauce
1/2 tbsp. light soy sauce
2 tbsp. water
1/4 tsp. Chinese five spice powder

Steps:

  • Firstly pork some holes on the pork butt slice. And then marinate the pork butt (or pork belly) with char siu sauce, light soy sauce, garlic and ginger. Message well and then cover with plastic wrap and set in fridge overnight.
  • Place only pork baking cracks (discarding garlic and ginger). Mix marinating sauce with 1 teaspoon of honey and 1/2 teaspoon of sesame oil for brushing.
  • Roast the pork butt at 200 Degree C for 30 minutes. Take the pork out and brush the marinating sauce at 10 and 20 minutes. Remember to turn over. Cut into slices.
  • In a small pot, add 2 tablespoons of water, 1 tablespoon of char siu sauce, 1/2 tablespoon of light soy sauce and 1/4 teaspoon Chinese five spice powder. Bring to a boil and set aside.
  • Cook noodles, recommend using egg noodles, instant noodles or alkaline. Follow the cooking time on package or reduce around 1 minute cooking time. Add green vegetable in the ending of cooking noodles. Mix the sauce with noodles and top with sliced char siu.

  • Marinate the pork loin in 3 tablespoons char siu sauce and 1 tablespoon oyster sauce for at least 30 minutes, ideally overnight.

    Heat the oven to 200°C, fan 180°C and roast the marinated pork for 20 minutes. Brush on the remaining char siu sauce, turn off the heat and leave the char siu in the oven to rest for a couple of minutes before slicing.

    Heat the vegetable oil in a large saucepan over a medium heat. Stir fry the ginger for a minute until fragrant. Pour in the stock and bring it to boil.

    Add in the soup seasoning mix, half of the spring onions and rice noodles. Bring the soup back to boil before serving.

    Ladle the noodle soup into big bowls. Serve with the char siu slices (BBQ honey pork), coriander and remaining spring onions sprinkled on top.
